Zucchini patty recipes abound but I haven’t tried them,
Zucchini salad: With small or medium size zucchinis slice lengthwise into long strips with a peeler. Do the same with Parmesan cheese. Dress with a lemon vinaigrette-I don’t remember if there is some Dijon in the dressing or not. Can add almonds. Eat as is or on a similar amount of lettuce.
I used to make a casserole type dish. Thin zucchini slices, already cooked rice, cheddar cheese, eggs, olive oil, salt and pepper, rosemary (careful with the rosemary as it quickly becomes overpowering). Bake in the oven.
