My family loved this zucchini crust pizza recipe from the original 70s Moosewood Cookbook by Mollie Katzen

I’ve taken it to summer potlucks and rarely see enough for seconds after everyone has gone through the line.

UPDATE!!!

*slaps forehead*

I forgot to say that you have to add a few chopped dates to the Halloumi cheese dish I make. Makes it extra yummy

Halloumi is one of my very favorites. I think you might make a narjissiya with zucchini and garlic lightly sautéed in olive oil, some little halloumi squares mixed in, plus sunny side up eggs on top, and a sprinkle of sumac (or paprika in a pinch), for a nice Sunday lunch.

I thought I couldn't add anything to all these wonderful suggestions, but since it hasn't been mentioned yet, zucchini makes a great add-in to shakshuka as well.

Oh, I am sorry I didn't see this before.
