So I just completed Week 3 - I'm on Day 22 to be exact. Results so far:

  • Unbelievable energy! Carter you were right - I literally feel 10 years younger. There is no more mid-afternoon lull or yawning on the coach by 8:00 p.m. I worked all day Saturday in my yard like I used to and it felt wonderful. Even hubby has commented that I have "more bounce in my step".
  • Sleep is completely restful. No more waking up during the night (unless I have too large a cup of herbal tea before bed - lol!) or tossing and turning. I wake up when the alarm goes off and I'm awake and rested feeling.
  • Sinus issues are completely resolved. Will not be adding dairy back after the 30 days.
  • Rash has resolved itself as soon as I eliminated coconut. Discoveries through this process have shown I have a mild nut allergy - I'm ok if I only eat a few during the week but if I have almonds more than 3 days in a row, my eczema starts to appear. Coconut gives me an unbelievably itchy rash after the first day of eating.
  • Absolutely no more gas or bloating at any time. Wonderful! Will not be reintroducing wheat when 30 days are done.
  • Joint pain completely gone. Even my bad knee is feeling better.
  • No hunger between meals because my meals are filling and satisfying. Now recognize when I'm truly hungry as opposed to boredom or emotional need to eat.
  • Starting to notice a real difference in my body composition - apple belly is shrinking. Yay
Overall this has been an incredibly positive and satisfying experiment. April 28th is officially my last day but I already know this is now a lifestyle for me. I never thought of it as a diet - but as a health "re-boot" for me. I go for my blood tests on May 1st and can hardly wait to see if there are improvements in my endocrine levels.
