Yoohoo: Gluten-Free Peeps

I make a yummy sweet caramelized French onion tart that I serve with a bitter rocket salad. I need to serve it with a gluten-free shortcrust pasty base this weekend, and was wondering if you had a good recipe.

I need a gluten-free pastry base that you would use for a quiche, IYKWIM. Not a pie-crust.

I've never made a crust like that but there is now a gluten free Bisquick that I believe acts like the regular one. So if you can find a Bisquick based recipe that should work with the gf version. It's made by Betty Crocker.

This is what I use for a GF quiche crust: combine 150 g almond meal/flour, 1 egg, 1 Tbsp coconut flour, and a pinch salt and pepper. I use a fork for this. Then I put it in a round stoneware dish, cover with parchment paper, and run a flat-bottomed bowl all over the top of it until it’s nice and smooth-ish. Pierce with the fork all over and pre-bake before filling.

You could also substitute the 1:1 GF flour (Bob’s Red Mill) for the regular kind in your usual recipe.

What Alexandra wrote up. Ground almonds (like those used for macaroons) works well as a flour substitute in short crusts.

I recommend experimenting ahead of time, Angie, because I have found that gluten-free baking is a whole other thing.

Merely subbing in gf flour or baking mix seems like it should work but doesn't always.

I make a roasted cherry tomato, caramelized onion and gruyere tart on a crust that includes cornmeal, so that might be something to look into for a crumbly effect. This one also looks good:

Hope it works well Angie. As a GF eater, I should be expected to know this, but I haven't had much success with pastry. Also I eat too much of it when raw!
I enjoy fillings more than cooked pastry and yours sounds gorgeous! Anyway I am keen to hear how it works out.

Anne, I tried the base, and it worked just fine. I'm glad I could support our gluten-free guest (who was grateful). As a gluten-eater though, my onion tart tastes a whole lot better with its regular pastry base
