I think one of the ways to keep the anonymity is to simply write YLF Santa (or Ylf Santa) as the sender's name. I bet the people at the post office won't blink, Ylf is perfectly fine as the first name. That's what I did in previous years.
It gets trickier with the postages, I think it largely differs from country to country. Most countries in the European Union at least, have some untaxable amount for the imported goods, but it's rather symbolic. This is why it's safe to keep the gift value around or below approx 20USD, because the postage will cost more for international shipping, so it may all add up for both sides.

Regarding the date, please try to be ready to post by 18th November. As early as it may seem, based on previous experiences it's safe to say things will get too busy in everyone's lives not to mention for the delivery services and post offices around the globe, and the hope is to all have the gifts on the recipient's ends by the opening date and avoid someone being disappointed and feeling left out.
