Couldn't help but join on the fun for April Fools (though this recipe is kind of handy/useful). While I didn't make this today, I do make it fairly often...
It's what I call "Breakfast Casserole" - a crust-less "quiche" of sorts, even if it's made in a rectangular casserole dish sometimes, and not in a proper pie plate.
This version is browned, Italian turkey sausage, chopped green onions, red bell pepper, sauteed sliced portabella mushrooms, grated smoked gouda cheese.
Brown up some sausage in one pan, sautee some vegetables in another pan. Line a glass baking dish with parchment paper. Scatter browned, crumbled up sausage across bottom of casserole dish. Top with some of the veggies you have on hand (either fresh or sauteed). Pour either 6 or 12 beaten eggs (6 eggs for a square 8x8 dish, or 12 for a 9x12" dish) over top, scatter rest of veggies into the mix, throw in some grated cheese and season with a bit of salt and pepper to your taste. Bake in the oven at 350F for half an hour. Let cool, loosen 'pie/quiche' with a knife around the edge of casserole dish. Utlizing parchment paper underlayer - lift entire 'casserole' out of glass dish, transfer to a cookie cooling rack (with parchment still underneath). Once cooled, slide onto a cutting board, and cut into single serving sized squares. Serve for dinner that night (reheated or cold) with a nice green salad and homemade dressing. Serve egg pie/quiche-like thing with your favourite condiment - my husband likes sour cream. I'm partial to Maya Kaimal brand spicy ketchup, or maybe some fresh salsa.
Put leftover cut up "quiche squares" into tupperware container in the fridge and use for breakfast 'on the go' or for a lunch bag item. Can be eaten cold or reheated. Note: you can walk out the front door with a cold "quiche square" in your hand from the fridge - tasty, and a lot better than a drive-through or coffee shop option. Can also toss a square into a ziploc bag or container and take to work for lunch.
Note: you can make this with any ingredients you have on hand - does not have to be turkey sausage - could leftover diced up ham, some shrimp, or a vegetarian version (spinach, mushroom, sundried tomato etc.).Throw something (your favourite ingredients) into bottom of a parchment-lined casserole dish, pour beaten eggs (6 eggs for a square 8x8 dish, 12 eggs for a large 9x13 rectangular dish), on top, scatter some cheese in there if you like or maybe some fresh herbs (ie. chopped chives or fresh basil).
