YUM ! Being Portuguese I just love seeing all this kale ! We cannot live without our kale. I love boiled kale with oil and vinegar. We often use it as a side dish for cod fish.

This year I tried a "basic " new potato recipe that you can add different kinds of things to and serve cold or hot. My family loves it !
The basic recipe for me is
1lb. new potatoes
1 bag of frozen corn ( in winter ) , fresh corn in summer taken off the cob
red onion medium, bigger if you like onions
as much garlic as you like
olive oil
basil or parsley
Boil the potatoes. It usually takes about 10 mins. With a tablespoons of olive oil in the water.
I cook the onions ( with the garlic ) in the oil in a frying pan until they get translucently opaque in low to low-medium heat. This carmelizes them and gives it a sweet flavor
I then add the corn and sautee that too for a few minutes. Then last, just a minute with the basil or parsley.
I remove from the stove and mix everything together. I then add a couple of heaping spoonfuls of guacamole, a sprinkle of parm cheese, a little more fresh herb and vinegar to taste. Sometimes I do a table spoon of olive oil.
You can actually add anything to potato mix. But this is my family's favorite. I have also done the above version for a cold salad in the summer with raw kale.
