My mom is 84 and also has dementia. Uniqlo heat tech camisoles, turtlenecks and socks all work quite well for her.
Alfred Dunner corduroy pants are her favorites. Elastic waists, very soft.
Alfred Dunner also has lots of sweatshirt/fleece options.

My mom is 95, happily not fussy, and she really likes the Lands End pull on fleece pants. I also got her Cuddl Duds to wear under everything. J Jill is a great idea, their chenille sweaters are so soft and very washable.

When MIL (RIP) first went into memory care we bought her stuff from Lou&Grey (their softest line), Lands End, LL Bean. Then we noticed as Joy said things got destroyed in the wash or went missing. So we were constantly buying more clothes. All the time. In final years we just bought stuff on clearance from Target, TJMaxx, and similar. I'd do the "soft" test. Did not spend a lot because the stuff just kept ... disappearing.

I am not implying here that her stuff was stolen; she had toileting issues. For that reason, definitely don't buy clothes that can't be machine washed, boiled, bleached. Sure, if there's say a Burberry scarf she loves, take that, put a label in it, put it in the locked closet and only take it out when you are there and you are taking her out for the day.

Also we frequently just asked if they'd turn her room temperature up. They were happy to oblige. It would be a roasting 90 degrees and MIL was still cold, even though wearing a head-to-toe thick fleece pajama set with wooly slippers, socks, and a couple of quilts on top too... she'd be shivering.
