WEll, it might sound basic, but when organizing my closet (or any part of my house), I tell myself that all I have to do is 15 minutes. I set a timer and this lets me feel as though the task is less daunting... I'm simply doing a teeny bit at a time. By the time the alarm rings, I'm sometimes so "into" the de-cluttering that I just keep going, but if not, at least I've managed to do something. You'd be amazed by how much you can accomplish in a relatively short amount of time.
