The tray baked vegetables look very similar to a dish my UK based sister cooked for a family dinner we had on Monday night. She is vegetarian so only ate that but we also cooked Tuscan chicken to go with it for those who are not. Her 20 year old son is here with her. The tray bake was yummy

I had an amazing first day! The weather was gorgeous and it’s just so fantastic to be able to hang out with Angie (and Greg, Sam and Jo too, of course) in person again. The walk was beautiful, Seattle really is stunning, and we had delicious fish tacos and Hong Kong bubble waffles for dinner. My tummy and heart are both full!!
