Because Angie has been posting phenomenal recipes, I figured maybe we could all get in on the fun. It doesn't matter if it's an old family recipe, one you made up yourself, or one you discovered over the internet. It can be homemade or use short-cuts. Just post the recipe, and what you or those in your household rate it.
I have been baking, and while I enjoy making things homemade, sometimes I take short cuts. If that's not your thing, then avoid the Chocolate Bundt Cake. But I've been baking a LOT. I have three hungry teenagers to consume things, and I am constantly looking for new recipes, so PLEASE POST YOUR RECIPES!
Orange Chocolate Chip Muffins (Dh and the kids rate this a 7.5 out of 10. They favor pumpkin muffins, even out of season)
- 1 large orange, zest of, minced
- 1⁄3 cup orange juice
- 2⁄3 cup water, boiling
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1 teaspoon pure vanilla extract
- 1 cup semi-sweet chocolate chips
DIRECTIONS
Preheat the oven to 400 degrees F & spray oil a 12 cup muffin tin.
- In a small bowl, combine orange zest, orange juice (the juice of the orange you zested should equal about 1/3 C) & boiling water & let stand for 10 minutes.
- Meanwhile, in a large bowl, whisk together the flour, sugar, baking powder, baking soda & salt.
- In another bowl, beat together the egg, butter & vanilla, then when the OJ mixture is ready, add that to this mixture, before stirring this mixture into the flour mixture just until moistened.
- Fold in the chocolate chips, then pour into the muffin tin & bake 12-15 minutes minutes or until a toothpick inserted near the center comes out clean.
- Cool in the pan on a wire rack for 10 minutes before removing the muffins from the pan & putting it them on the wire rack.
Chocolate Bundt Cake (My chocolate lovers rate this a 10/10, but my fruit lovers prefer a lemon bundt cake)
Ingredients
1 pkg chocolate cake mix
1 small pkg instant chocolate pudding mix
1/2 C vegetable oil
1/2 C hot water
1 C sour cream
4 eggs
1 t vanilla
mini chocolate chips (optional)
Mix together and beat for 2-3 minutes with a hand beater or in a stand mixer. Pour into an greased and floured bundt cake pan. Bake at 350 degreees F for 45 minutes. Let rest out of oven for 5 minutes before inverting onto plate. Cool and cover in chocolate icing, if desired.
