I'm on a cooking kick this week- I was going to make a pork roast with honey glazed carrots and apple compote yesterday, but then I realized that my roast is almost 8 pounds and I didn't have time to cook it. So, I made a double batch of the apple compote and served that with pancakes and bacon for dinner- we will have the rest with the pork roast tomorrow. Today, I'm making Coq Au Vin from Curtis Stone's recipe. I've been thinking about a spring potluck that we have in a couple of weeks. I think that I am going to make Mac N Cheese 'cupcakes' (have made these before and they are great bring along food), and some sausage shish kebobs.
