Yay! What a great tea collection Kari I feel there is no such thing as "too much tea." I've got a lazy susan shelf (plus some pantry space) full of tea and host tea parties several times a year 0:) I think we should have a YLF tea gathering sometime since so many of us love tea!
Not to hijack, but:
Alicat - Tea generally keeps in good condition for a year, after that its flavor starts to deteriorate. But it can depend on the tea; I have several teas that are a couple years old that have lost almost no flavor, and I still happily drink them often. If the teas are good quality, kept sealed in an airtight container, and not terribly delicate (like white teas, and some of the lighter greens) then they should be fine to drink If kept out of an airtight container, they last 2-6 weeks before the tea starts to break down.
As far as brewing, I suggest getting a large tea ball. You'll probably need to experiment with how much tea works for the strength you desire, but I find a 2" tea ball filled halfway is great for a 16oz mug If you want it stronger, add more tea (sizing up on the tea ball if it's needing to be filled more than halfway), but do not brew longer (too-long brewing leads to bitter tea!).
If these are green teas, my suggestion for the prefect steep: Fill your tea ball no more than halfway. Prep your water to just-before-boiling temperature (if it's too hot those teas get bitter). Give the tea in the ball a quick rinse with the hot water by pouring a little water on and shaking the tea up. Fill your mug up with the water, and pop in the tea ball. Let brew for 30 seconds - 2 minutes (depends on the tea, I generally do 30 seconds while moving the tea ball around in the water which gives me 6-8 mugs!). Remove. Enjoy
For black teas: same process, use boiling water and steep 3-5 minutes instead.
