They are DAIRY-FREE and GLUTEN-FREE. Not vegan because of the eggs and honey. Healthy, filling, light, and DELICIOUS.

I make them all the time, and keep them in the freezer where they store perfectly. I take one out for brekkie or a snack to have with tea. I microwave to heat them through. They are better WARM.

I've perfected the recipe for our taste buds. Adjust as you like.

Stir this all together in one bowl:

  • 4 RIPE mashed bananas
  • 1 cup of ground oats
  • 1 tsp baking soda
  • pinch of salt
  • 1 cup of ground gluten-free granola (I use KIND “Oat & Honey”)
  • 2 eggs
  • 2 tablespoons melted vegan butter (I use Earth Balance)
  • 1/3 cup of honey plus an extra tablespoon
  • 1/2 to 3/4 cup of dark chocolate chips (you can use milk if you like but that's not dairy-free).
  • pinch Cinnamon

*I grind regular oats and the granola in the food processor to make the flour

*You can use 2 cups of regular oats if granola is not your thing. Grind two cups of oats to make oat flour


Preheat oven to 350F. Pour into muffin cups - makes about 10. Bake for 30 mins. Cool on a rack, before you devour!
