Just thought I'd share this recipe I tried yesterday, as they came out so good and really similar to the real thing (minus the ridiculous prices). I used maple syrup in place of brown rice syrup and a spoonful of apricot jam in place of the apple juice, as that was what I had at hand. They are a bit sweeter than KIND bars, but she mentions in the recipe that she couldn't figure out how to reduce the amount of honey and still get the right texture. I do have an idea though. I am going to buy maltose syrup next time I am at the Asian market - it's used in a lot of Asian sweets and is less sweet than honey but has a similar texture - and see if that reduces the sweetness.
