Hazelnut Flour

Hello, all,

I have a couple of bags of Bob's Red Mill Hazelnut Flour and am not sure how best to use it. I've looked online for recipes and have found one that looks interesting (for Caveman Cookies), but since most of us are spending time at home, I thought I would post here to see if anyone has any amazing recipes they'd like to share.

Mr. Maven bought some for his diet--he's lost 60 pounds now. He's been buying different kinds of grains and other kinds of flour. He wasn't quite sure what to do with it, so he's been adding it to muffins he is experimenting with. He's also added some to Krusteaz muffin mixes also adding extra water or egg whites. It gives the muffins a bit of a richer taste. So far no amazing recipes, but I'll ask him if he's run across any good ideas.

I look forward to seeing if others have good recipes.

I wonder if it could be substituted for almond flour. I’ve made this Clementine Cake several times and it’s delicious. It uses almond flour.

MsMaven, congratulations to your husband! It can be fun experimenting with other flours, but this one is a bit of an odd duck.

JAileen, that recipe looks delicious! I wonder if the hazelnut taste would interfere with the brightness of the orange flavor. I do have almond flour on hand though too, so maybe I'd make your recipe as written.

I’ve used almond flour as a substitute for regular flour to make the crumble topping on a cobbler (apple, apple+pear, peach). It was delicious and boosts protein. You might be able to do the same with hazelnut flour. I LOVE the flavour of hazelnut, but found out the hard way that I am VERY allergic to them.

Carla, that is an excellent idea! I have a cobbler recipe that uses almond flour for the topping, and hazelnut would be a great substitute. Too bad that you and JAileen are allergic! Hazelnuts can be so yummy.

Boiled my clementines last night...plan on making the cake today. I am going to use half hazelnut and half almond flour.

Be careful serving anything made with this flour to those who may be allergic. DH has a very bad allergy to hazelnuts. He can’t even breathe when his throat swells shut. The gluten free trend has been life threatening for some of us. As a type 2 diabetic, I live in fear of rice in food putting me in the hospital. It means reading labels every time at the grocery store, a slow process, 2 small bites of a gluten free pancake and my blood sugar was over 300. A normal one is below 70. I should have gone to the hospital.

Wow, I had no idea that rice could raise blood sugar so high! I will be eating the hazelnut cake myself, so I won't have to worry about harming anyone inadvertently.

Post a picture when it’s done. I had no idea hazelnut was such a common allergy. I developed it from birch trees, which are in the same family as filberts (hazelnuts), as are alders.

Let us know about that clementine cake. It's a wonderful recipe. I make it regularly with almond meal but love hazelnuts

The cake turned out well! I made half the recipe since it was just for me, and I used half almond flour and half hazelnut flour. I couldn't taste the hazelnut flour. It is a very moist cake and tastes just as described by the recipe author--like a cake that has had syrup on it.

Here is what is left. I didn't have a pretty pan to bake it in so just used a glass loaf pan.
