Ah! It appears that cheese is a fraught subject! In retrospect, I can see how it is a difficult food. I do know some folks with gastric issues (myself included) where cheese is okay and even a delight! I'm having problems with animal protei (meat), but fish, eggs and cheese are okay. Luckily, I've never had any problems with dairy. Thus, I'm enjoying going beyond the standard grocery store choices. I'm interested in recommendations and willing to hunt them out.

RL - never heard of yak cheese, but it sounds interesting (mild, high in 'good' fats) so will see if I can source some)
Lisap - I know there are some cheese substitutes made from nuts, and cashews is often used to make these products. DS#1 doesn't have nut allergies, but he doesn't digest cashews well! He is super thin, and I used to buy cashews in bulk for him to try and fatten him up - but he used to get very sick. It took a while to figure out his intolerance. DS#2 has some lactose intolerance and has goats milk and goats milk ice cream! He doesn't have problems with cheese, though.
Regarding cheesecake - do you like it dense, or light and fluffy?
