Is it possible that you have product build-up? My hair stylist told me that that can make your hair crunchy. She said that they have something called a "Malibu" that they do at the salon. It's not too expensive--I think maybe $30--but it's supposed to remove product build-up from the hair.
Do you have hard water? Sometimes minerals can build up in the hair and make it feel almost like straw. (I had this happen to me. I found out what was happening when I moved somewhere with soft water and my hair changed dramatically within the week. But I do not use shampoo in my hair, which I think made the problem worse--shampoos usually have stuff in them that softens the water and helps remove mineral build-up.) If you think you might have mineral build-up, you could try rinsing with diluted vinegar or lemon juice and see if that improves things a bit. I think another way to test this out (maybe a better way?) would be to use distilled water for your final rinse.
If your hair is overly dry, it might also help to stop using any products that have protein, which can make the hair even drier. You'll have to do a search online to find out exactly which ingredients would fall into this category. Some examples of ingredients would be hydrolyzed wheat or soy protein, amino acids, and extracts made from grains.
