As far as changing colors, it happens to me with reds and deep pinks, but I've never had it not change back when the fabric cools off. I think it's something about red dyes.
The shininess thing can be avoided by using a press cloth (you can get them at hardware stores sometimes or buy a length of silk organza). Or you can just press instead of iron - don't move your iron, just put it down, allow the heat to penetrate, then lift before moving instead of sliding it across the fabric. Some fabrics are super-sensitive and you're better off steaming - you should be able to do this with a decent iron, just put it on the steam setting and hold it close to but not on the fabric.
