Visited my parents to make Christmas cookies this weekend. Made gingerbread, sugar cookies, and oatmeal thumbprint cookies with candied ginger. They are all yummy, but what I really overate all weekend was my mom’s curried pecans. YUM.

I’d never noticed it before, but my the colors I’ve been wearing recently are accent colors in my parents’ tastefully neutral decor. I wonder if that’s why I’m so drawn to those colors—they were imprinted in my subconscious.

In Belgium we don't really have a holiday cookie baking tradition, but I could always start one, of course...

WOW. Those are the most colourful Xmas cookies I've seen. How fably festive. Eye candy.

We'll probably make gingerbread, so no surprise that it was your oatmeal with ginger ones that stood out for me flavour wise! I recently made some oatmeal cookies with ginger though them and white chocolate drizzed over that tasted amazing!! (I've recently got into gingerbread lattes too, after hearing about them from a colleague who's in London, who abhorred the thought of them! I, however don't like coffee, so I liked to disguise the taste if I need do drink it to keep awake).

Since we often give edible gifts in the family I'm sure my daughters will be cooking, and I think one of them is planning to make chocolate dipped peppermints. But I've put my foot down and said no making coconut ice - my self control is all but lost when that's around!

OMG! They look so scrumptious!!

I am making a batch of vanilla and a batch of dark chocolate peppermint pizzelles, as well as a batch of pecan kisses. I am making my apricot walnut rugelach for New Years. I used to make a huge variety of cookies in the past that I used to give out with Christmas presents, but our family has dwindled so much in the past few years due to deaths.

Thanks for the color love. We have always done “serious” cookie baking and decorating, maybe because Dad gets involved. Rachylou, that’s high praise, coming from a (semi?) pro baker.
Anne, all that ginger sounds delicious, and Danuisa, if you make your own pizzelles, I’m impressed. I buy them at World Market the rest of the year, so I can tell myself I’m having a cookie for a fraction of the calories.

What beautiful cookies! They look absolutely delicious.

I've got gingerbread cookie dough in the fridge chilling for tomorrow. I've never made gingerbread cookies before and felt like trying something new!

My DD is on a foray into vegan baking, so she's trying different cookie recipes. One was a colossal failure. The cookies were too soft, and I think it was because she used Earth Balance margarine instead of Smart Balance margarine. Earth Balance has water listed as the second ingredient, and contains noticeably less fat. She's going to try to make cookies again this weekend--different type and different recipe.

Gigi, I can’t think of anything more festive to start the holidays off. You get to engage with shapes and exuberant colors of the season, think of the people you’ll give them to, and have a lovely, ginger-scented house for a day or two!

BC, this recipe didn’t call for eggs, but we did use butter.

Anne, what is coconut ice?

Kerlyn, I guess coconut ice isn't a baked product. It's more on the lines of fudge.
There are several ways to make it (including on a stovetop) but my easy recipe uses

4 cups icing sugar
3 cups coconut
1 tin sweetened condensed milk
1 tsp vanilla

Heat the condensed milk in a microwave safe bowl, add the other ingredients til mixed and put in a flat slice tin (height can vary, about an inch is common) and chill in the fridge and then cut into square. Often made in 2 different colour layers, the classic being pink and white, but I don't bother.

It's a big overeating trigger for me, very sweet and not that much fat to restrain me!

Anne, that sounds yummy but i don’t know what form of coconut you mean. Maybe it’s better this way. Otherwise I wouldn’t fit through our door to go get ingredients to make more.

Ok - I won't tell you then! (I wonder if that's a cultural thing that you don't know which I mean - I would have thought it obvious in Australia (or I would have specified) but an friend from the USA tells me that american recipes are way more detailed and specific). Anyway, it's very easy to google should anyone be interested

Those are very colourful cookies. Your mother looks very relaxed and lovely in her dress.

I don`t bake. I cook when needed and I make great salads. At Christmas I leave the baking to others. We always have lots of things to eat.
