Crispy fried tofu is a good one, as is crispy fried chicken-style seitan (if there's no gluten sensitivity). I made a batch of fresh seitan yesterday in this style for our Year of the Dragon mini-celebration, and today convert it to fried "chicken" nuggets for during the Puppy Bowl.

In case the pattern isn't clear, most people will eat things that are crispy. People who don't like meat or beans or breakfast are often "texture eaters" who will accept crispy or crunchy.

On the cottage cheese theme - I realize this probably won’t help you Helena but maybe someone else - yesterday I threw together some cottage cheese, salsa and sliced olives (plus sriracha) and ate it with bagel chips - quite tasty, similar to those layered dips with cream cheese, salsa etc. Another use for it is egg bites - Starbucks copycat recipes abound on the internet. I use the instant pot and a silicone mold from Amazon, but this recipe is for muffin tins in the oven. Very handy for grab and go. The bacon and Gruyère version is rich (and a bit pricy to make) but there are many other variations.
