for lunch today - roasted a red and orange pepper with oil and seasonings and pepper. made brown rice. sauteed spinach, garlic, parsley and basil and sun dried tomates. put in the peppers and topped with some shredded gouda. very good easy and yummy!

Well, I made the turkey yesterday, and had all the ingredients for the California salad (lettuce, chopped celery, shredded carrot, mandarin oranges, mixed nuts, and raisins.) Dinner was well received.

Salvaged enough leftover turkey for 3 different meals (for 4) and made 10 cups broth with the leftover ‘stuff’. The menfolk have requested hot turkey sandwiches, so I need to source some peas, and will make ‘comfort food’ Friday night.

While the food situation is much better here than many places, my cooking have changed from doing a meal plan and then shopping, to shopping and then seeing what I could make with what I could find. So we found two boerwors, a south African sausage. Last night we had it with vegies. Tonight we had it in fried rice. I had some cooked rice that needed using up, and some mushrooms likewise. I am being very strict about not wasting food or overeating.

Anne, same here. We have started improvising with whatever we find in the stores and whatever leftovers we have. Last night we mixed up leftover basmati rice (from Indian takeout a few days ago) with leftover pork tenderloin and leftover sliced veggies. Throw it all in a pan and stir fry. It was actually really good!
