I've done a fair amount of cooking/baking in the last 36 hours, so I thought it would be fun to share what we've been making recently.

Yesterday I made idly, a spongy fermented rice/lentil cake, and two traditional accompaniments: sambar (a vegetable stew of sorts) and coconut chutney

today I baked a pumpkin cheesecake (haven't had it yet, it's cooling in the fridge), which sadly cracked. I wanted to do the water bath method but couldn't find a pan big enough to fit the springform! and it's a "low-fat" cheesecake, using neufchatel and cottage cheese (you run the cottage cheese through the food processor to make it smooth), so I'm quite curious to see how it tastes!

And I also made carrot onion fritters for dinner.
