Nagi is a bit of a legend. There is some fancy stuff, but most of her meals are what you want to eat for dinner mid week. There are great collections too, eg vegetarian, fish, gluten free. Etc. A focus on fresh food. I find most of it is innately pretty healthy or it can be modified slightly. I'm coeliac, and I use GF sauces for the Asian/fusion recipes.

I haven't been cooking at all lately- but here's some from Suntigers Lazy Latin Vegetarian kitchen

Black beans (I just use canned), quinoa, corn (I use frozen roasted corn), bell pepper strips (frozen), green chilis, sazon or random Latin spices. Top with guacamole or sour cream.

Acai bowls- acai, peanut butter, banana (half blended in half sliced on top), a little almond milk to blend. Top with coconut, berries, granola.

Salads I like topped with strawberries, almonds or other nuts, feta, and vinegarette. I like butter bibb or red leaf lettuce most.

Peas (I use frozen) with thai peanut sauce and cashews.

I LOVE pasta, and I try to have it in as many ways as I can. It's affordable, versatile, and a great catalyst for flavour.
