First bread recipe (and one I still use!):
Dissolve 2tblsp yeast and 2tblsp sugar in 1 cup,warm water
Add 2 cups flour - stir, and let rise 1-2 hours
Measure 6 cups cold water
Mix flour 1-2 cups at a time with same amount of water until dough,is stiff and still slightly floury. Turn out onto counter and knead until elastic.
The trick to light, fluffy bread is to knead A LOT!
Put back in large bowl, smear top with a light coating of shortening, cover with wax paper and a towel, and let rise until double, about 1 1/2 -2'hours.
Punch down, cut up into 4-6 portions. Form into loaves, kneading an additional 20 turns, or roll pieces into balls the size of golf balls and place in a round cake pan.
Let rise 30-45 minutes.
Bake at 400deg. 30 min.
When out of oven rub tops with butter (which will melt). Mrepeat 5 min later.
Recipe makes 4 large loaves.
