				<description>I don't eat dairy anymore either Sara - so sometimes I make *two* of the smaller pans of these. One for my husband and one for me. I'm talking two 8x8 glass casserole dishes (use 6 beaten eggs per 8x8 pan). The one for DH will have loads of cheese, and mine might be spinach, bacon and sundried tomato. Voila - dinner's made, and breakfast/lunches for the next day or two are taken care of. After dinner, I parcel out the cooled squares into ziploc bags and tuck them into a large-ish tupperware container in the fridge. &#060;br /&#062;&#060;br /&#062;In the morning - you can just grab a pre-packed/wrapped up slice from the fridge to take for lunch or eat for breakfast. Just as tasty cold, or you can re-heat in the microwave if you want. &#060;br /&#062;</description>

				<description>Yummy!&#038;nbsp; I can actually&#038;nbsp;make this since the cheese is just on top.&#038;nbsp; My oldest son is allergic to dairy so I can't make anything with cheese mixed&#038;nbsp;in.&#038;nbsp; But if it's just on top, I can leave it off a section for him.</description>

Just add your favourite low-carb ingredients and you've got an easy and somewhat 'light' dinner (pair with salad if you like) with the added bonus of leftover breakfast squares or lunch on the go the next day. &#060;br /&#062;&#060;br /&#062;And KristinSF,&#038;nbsp; if you add a little cream to the mixture, it'll fluff up the eggs a wee bit more. If you don't want to add cream you can use a bit of water too. I don't mind not-so-perfectly fluffed up egg &#034;quiche&#034; squares, the flat size and shape makes them handy for packing in a work lunch. They fit easily into one of those sandwich bags. &#060;br /&#062;&#060;br /&#062;Might want to grease the pan with some butter - put some butter onto some scrunched up waxed paper, and wipe all around inside of dish (discard wax paper after using to butter pan), even if you're still lining the pan with parchment. Eggs have a tendency to stick to pans, hence the parchment paper, which helps me get the whole thing out of the pan in one piece so I can then let it cool properly and cut into squares/pieces. &#060;br /&#062;&#060;br /&#062;&#060;b&#062;&#060;/b&#062;This is a good way to use up leftover vegetables from a dinner meal too. If I have leftover roasted broccoli or asparagus, I'll save them to use in an 'egg casserole' the next day. If you don't happen to have any cooked/sauteed veggies on hand, you can throw in some chopped/diced raw spinach or chopped up green onions. Regular tomatoes are too watery, but chopped sun-dried tomatoes work nicely here as well. &#060;br /&#062;&#060;br /&#062;It can be made any way you like - all veggies, cheese or no cheese, fancy or simple. &#060;br /&#062;&#060;br /&#062;Combinations:&#060;br /&#062;&#060;ul&#062;&#060;li&#062;leftover cooked broccoli, cheese, sundried tomato&#060;/li&#062;&#060;li&#062;spinach (chopped, raw/fresh), sundried tomato and bacon (I just use Kirkland real bacon bits from Costco)&#060;/li&#062;&#060;li&#062;turkey Italian sausage, sauteed red bell pepper, portabella mushrooms, green onions, grated parmesan&#060;/li&#062;&#060;li&#062;bacon and cheddar (bacon bits and shredded cheddar) - very simple&#060;/li&#062;&#060;li&#062;smoked salmon and leftover roasted asparagus spears&#060;/li&#062;&#060;li&#062;ham &#038;amp; cheese&#060;/li&#062;&#060;li&#062;&#034;Denver&#034; omelet style: ham, bell peppers, sauteed onion, cheese&#060;/li&#062;&#060;li&#062;shrimp (from a can, drained is fine) &#038;amp; green onion&#060;/li&#062;&#060;/ul&#062;You get the idea  <span aria-hidden="true" class="emoticon emoticon-smile icon-emoticon-smile "></span>  &#060;br /&#062;&#060;br /&#062;&#060;br /&#062;</description>

				<description>Couldn't help but join on the fun for April Fools (though this recipe is kind of handy/useful). While I didn't make this today, I do make it fairly often...&#060;br /&#062;&#060;br /&#062;It's what I call &#034;Breakfast Casserole&#034; - a crust-less &#034;quiche&#034; of sorts, even if it's made in a rectangular casserole dish sometimes, and not in a proper pie plate. &#060;br /&#062;&#060;br /&#062;This version is browned, Italian turkey sausage, chopped green onions, red bell pepper, sauteed sliced portabella mushrooms, grated smoked gouda cheese.&#060;br /&#062;&#060;br /&#062;Brown up some sausage in one pan, sautee some vegetables in another pan. Line a glass baking dish with parchment paper. Scatter browned, crumbled up sausage across bottom of casserole dish. Top with some of the veggies you have on hand (either fresh or sauteed). Pour either 6 or 12 beaten eggs (6 eggs for a square 8x8 dish, or 12 for a 9x12&#034; dish) over top, scatter rest of veggies into the mix, throw in some grated cheese and season with a bit of salt and pepper to your taste. Bake in the oven at 350F for half an hour. Let cool, loosen 'pie/quiche' with a knife around the edge of casserole dish. Utlizing parchment paper underlayer - lift entire 'casserole' out of glass dish,&#038;nbsp; transfer to a cookie cooling rack (with parchment still underneath). Once cooled, slide onto a cutting board, and cut into single serving sized squares. Serve for dinner that night (reheated or cold) with a nice green salad and homemade dressing. Serve egg pie/quiche-like thing with your favourite condiment - my husband likes sour cream. I'm 
partial to Maya Kaimal brand spicy ketchup, or maybe some fresh salsa. &#060;br /&#062;&#060;br /&#062;Put leftover cut up &#034;quiche squares&#034; into tupperware container in the fridge and use for breakfast 'on the go' or for a lunch bag item. Can be eaten cold or reheated. Note: you can walk out the front door with a cold &#034;quiche square&#034; in your hand from the fridge - tasty, and a lot better than a drive-through or coffee shop option. Can also toss a square into a ziploc bag or container and take to work for lunch. &#060;br /&#062;&#060;br /&#062;Note: you can make this with any ingredients you have on hand - does not have to be turkey sausage - could leftover diced up ham, some shrimp, or a vegetarian version (spinach, mushroom, sundried tomato etc.).Throw something (your favourite ingredients) into bottom of a parchment-lined casserole dish, pour beaten eggs (6 eggs for a square 8x8 dish, 12 eggs for a large 9x13 rectangular dish), on top, scatter some cheese in there if you like or maybe some fresh herbs (ie. chopped chives or fresh basil). Bake for half an hour at 350F.&#038;nbsp; Easy-peasy. Dinner's made, and you have leftover squares for 'on the go' breakfasts or lunches.&#060;br /&#062;&#060;br /&#062;</description>
