				<description>&#060;p&#062;I love Veggie Kabobs on the grill in summer.&#060;/p&#062;
&#060;p&#062;I skewer small mushroom caps, thick zucchini slices, red pepper and red onion pieces. Then I drizzle melted butter or olive oil over them and season them with chopped fresh basil and garlic powder. Next I hand them over to DH and he grills them until the veggies are tender. Delicious!&#060;/p&#062;
&#060;p&#062;Add a bowl of guacamole and tortilla chips and I'm in heaven!  <span aria-hidden="true" class="emoticon emoticon-smile icon-emoticon-smile "></span>

				<description>&#060;p&#062;Reading this thread at lunch time is dangerous! I'm unbelievable hungry after reading all the yummy food talk... I love all veggies, but there are special recipes dear to my heart. My top five are:&#060;br /&#062;
1. Eggplant  - Not surprising since Turkish cuisine has 41 completely different eggplant recipes and I savor every one of them.&#060;br /&#062;
2. Asparagus - Especially green thin ones steamed or pan-fried in little olive oil with parmesan. I made up the parmesan recipe.&#060;br /&#062;
3. Green beans - Cooked in olive oil with tomatoes and onions.&#060;br /&#062;
4. Portabella and Shiitake Mushrooms - In the oven with grated cheese and salami on top&#060;br /&#062;
5. Brussels Sprout - Steamed

We have an excellent Malaysian restaurant in Seattle called the Malay Satay Hut. It’s a bit of a dive but places like that serve the BEST food and nothing will prevent me from eating in superb restaurants like that. Also, I make a lot Indonesian food which has its similarities.

&#060;p&#062;There's hardly a vegetable I don't like or won't try. A lot depends on preparation, too. A bit  off topic, grapefruit is one thing I can't tolerate in any form. Even with lots of sweetener.&#060;/p&#062;
&#060;p&#062;In no particular order:&#060;/p&#062;
&#060;p&#062;Brussels sprouts&#060;br /&#062;
Alliums of all sorts: onions (white and blue), leeks, shallots, green onions, garlic, chives&#060;br /&#062;
Cauliflower - especially roasted (toss with cumin, coriander, chili flakes, olive oil and lemon juice (or curry))&#060;br /&#062;
Beets - especially roasted. YUM!&#060;br /&#062;
Cabbage - big in Eastern Europe. I especially like it stewed. And sauerkraut.&#060;br /&#062;
Kale&#060;br /&#062;
Spinach&#060;br /&#062;
Carrots&#060;br /&#062;
Okra&#060;br /&#062;
Tomatoes - in any form&#060;br /&#062;
Asparagus - but not overcooked&#060;br /&#062;
Avocado&#060;br /&#062;
Sweet potatoes&#060;br /&#062;
Fennel (and fennel seeds for spice)&#060;br /&#062;
Green peas&#060;br /&#062;
Zucchini&#060;br /&#062;

Tonight we had roasted brussel sprouts...yummy - chopped in 1/2 tossed in just a bit of olive oil, cumin, fresh garlic...OHHH so yummy!! Cauliflower poppers are fun to make like this also but I use cumin &#038;#38; chili powder instead of garlic. My kids go nuts over these &#038;#38; dip in ranch! Mmmmm! &#060;/p&#062;

				<description>&#060;p&#062;To all the brussels sprouts haters -- I have to say that these are amazing if cooked properly.  IMO, if they are steamed, don't bother.  What you want is some caramelization -- either through a single-layer saute so that every sprout touches the bottom of the pan, or a high-heat roast with olive oil, garlic cloves and a little liquid of some sort added toward the end.  Plenty of coarse salt.  Yum.  They should also be smallish and cut at least in half, maybe even quarters.  See Mark Bittman and Heidi Swanson for excellent recipes.&#060;/p&#062;
&#060;p&#062;Dislikes...&#060;br /&#062;
I am not a fan of peppers since I feel that any dish that includes peppers becomes, essentially, a pepper dish.  They take over the flavor in a most domineering way.  I cannot abide peas or lima beans.  And, as a vegetarian, I have seen way too many eggplants abused in the hands of restaurant chefs who can't think of any other meatless thing to put into a sandwich.  You have to know what you're doing to cook an eggplant.  (Properly cooked eggplant is my Perfect Pants Length: it's really important, but almost no one knows how to do it correctly.)&#060;/p&#062;
&#060;p&#062;Loves...&#060;br /&#062;
Broccoli, spinach, arugula, roasted cauliflower, collard greens, kale, summer tomatoes, artichokes, avocado, broccolini.  And the aforementioned, much-maligned brussels sprouts.  &#060;/p&#062;
&#060;p&#062;One more dislike: cucumbers.  On this one, I defer to Samuel Johnson, who famously said, &#034;A cucumber should be well sliced, and dressed with pepper and vinegar, and then thrown out, as good for nothing.&#034;   <span aria-hidden="true" class="emoticon emoticon-smile icon-emoticon-smile "></span>

				<description>&#060;p&#062;I bought green garlic from the farmer's market once Patience, and mine was green. Looked a bit like spring onions if I recall. Anyway, I liked it. It tasted like a milder garlic to me. &#060;/p&#062;
&#060;p&#062;Add brussel sprouts to the list of veggies I don't like (which so far only contains three things). &#060;/p&#062;
&#060;p&#062;Now I'm hungry. All this veggie talk is making me crave a nice hot veggie stew.

				<description>&#060;p&#062;I was just thinking last week, that of all the foods in the world, the one I would miss most if it didn't exist is-- garlic. I don't really think of it as a vegetable though. Last month at the grocery store I bought something called green garlic salsa (fresh). I was a little confused as to why it was called green as it looked red to me. Took it home to discover that the garlic was green, as in not ripe. My husband thought it was awful while I proceeded to eat it up (in small doses and I had to chew gum afterwards. Hee hee.)&#060;/p&#062;
&#060;p&#062;Other favorites are home grown tomatoes, asparagus, sweet potatoes, spinach. Any roasted vegetable is DELISH! Try putting a bunch of garlic, grape tomatoes, sliced red onions and zucchini on a baking sheet, toss with olive oil, roast, and then toss with pasta and parmesan. (Really I think you could do this with any selection of vegetables and it would be good.)&#060;/p&#062;
&#060;p&#062;I do not particularly like cauliflower and brussel sprouts either.

The only ones I really don't like, besides the aforementioned chard, frozen peas, and frozen corn, are squashes (except some preparations of butternut), sweet potatoes (except sweet potato fries), and yams (except yam tempura).&#060;/p&#062;
&#060;p&#062;Hanna, I'd also love some okra recipes.  There's a dish I love at a local Malaysian restaurant that includes fried eggplant, whole okra, dried shrimp, basil, and oyster garlic sauce.  I'd love to be able to make it.&#060;/p&#062;
&#060;p&#062;Angie, you cook a lot of Asian food too, right? Any recipes or tips you could share?

Potatoes - they are so versatile&#060;br /&#062;
Onions - not necessarily alone, but in other dishes, they add so much flavor&#060;br /&#062;
Sugar peas make a great snack&#060;br /&#062;
Spinich - cooked or raw&#060;br /&#062;
Sweet corn on the cob - tastes like summer to me&#060;br /&#062;
Pumpkin in baked goods like pie, muffins, etc.  but on second thought, maybe it's just the spices that go with pumpkin - cinnamon, nutmeg, yum.&#060;/p&#062;

				<description>&#060;p&#062;There is not a vegetable I won't eat. My mom grew up in central CA wine country where fresh, tasty vegetables were a daily part of life. I was raised on any and every vegetable. As kids, we amazed friends and family when we'd opt for the salad bar vs. fried foods at an all-you-can-eat.&#060;br /&#062;
My current favorites are vegetables found in moroccan meals. I roasted some carrots, parsnips and sweet potatoes and served them over chickpeas and couscous with a carmelized onion/raisin/cinammon/honey/pine nut &#034;sauce&#034;. I was in heaven.&#060;br /&#062;
For snacks during the day, my husband and I will frequently grill some sweet yellow onion on our George Foreman or steam fresh spinach. During the summers, we opt to grill squash, etc on our outside grill. Nothing tastes better. &#060;/p&#062;
&#060;p&#062;I think a lot of people don't care for vegetables because they are overcooked.

				<description>&#060;p&#062;Without reading all the posts in this thread...I can't think of a vegetable I don't like.  After giving up sweets, they taste even better because the natural sweetness of the veggies shines through.&#060;br /&#062;
I especially adore artichokes, asparagus, and arugula and edamae.  In cold weather I steam or oven roast them most often.  When it warms up, I grill everything from sweet corn to beet slices.&#060;br /&#062;
Cauliflower, which I didn't use to care for, now is my sub for potatoes and rice.  It's mild enough steamed to take on the flavors of whatever it's put with and has made it possible to continue to eat Indian and oriental dishes.&#060;br /&#062;
I also love fresh herbs like fennel and dill and cilantro.
