				<description>&#060;p&#062;I too discovered raw kale salad in 2013, and much enjoyed it (doubly so since I finally had kale in my own garden. Until the snowplow buried it.)&#060;/p&#062;
&#060;p&#062;But my favourite new recipe of the year was Tuscan Turkey Soup, introduced to me by my daughter, as an amazing and new way to use up the leftover turkey. I can dig up and attach a recipe if desired, but it's like your regular (broth based) turkey soup with the addition of: tomatoes (diced, sauce, paste or juice); Italian seasoning such as rosemary or oregano; spinach or kale; and ideally pasta or noodles (though still yummy with rice), Also, some fresh Parmesan grated on top if available.

				<description>&#060;p&#062;Just chiming back in to report on a few cooking adventures. I have to say that the chicken with dijon and maple was a huge hit and will become a repeat. Thank you for posting that Adriane!&#038;nbsp;I pounded out the chicken breasts so they would cook more evenly but other than that, I followed the recipe exactly. Everyone loved it. &#038;nbsp;I also made one of the raw shredded brussel sprout salads with cranberries, nuts and dijon dressing. Very good but didn't receive much love from the kids. Alicat's sausage, kale, and bean stew came out great too. The recipe is very similar to the Olive Garden version except doesn't have half and half in it. I will be making that again too. So glad that everyone posted their recipes. It's just the thing I needed to get motivated in the kitchen!&#038;nbsp;

&#060;p&#062;A lot of my best meals don't use recipes. &#038;nbsp;For example earlier this week I had a discounted (close to expiry) package of gnocchi and a $1 (discounted because they were getting too ripe) clamshell of cherry tomatoes to use up. &#038;nbsp;I halved and&#038;nbsp;sauteed the tomatoes in olive oil with lots of garlic. &#038;nbsp;Then I&#038;nbsp;added a blob of tomato pasta sauce from an open jar in the fridge, a glug of heavy cream, a couple of tablespoons of pesto, and&#038;nbsp;a few handfuls of baby spinach that I tore into pieces before tossing into the pan,&#038;nbsp;plus salt and pepper. &#038;nbsp;I mixed in the cooked gnocchi, and then topped it with some crumbled feta before serving. &#038;nbsp;It was delicious and took less than 30 minutes. &#038;nbsp;

				<description>&#060;p&#062;Sure. Ok, this recipe uses a mixer and the fridge... I have to say, I'd like to know when croissants were invented and what they did before this kind of equipment, if it was long ago...&#060;/p&#062;
&#060;p&#062;Things to know:
&#060;/p&#062;
&#060;ul&#062;
&#060;li&#062;Croissants *are* ambitious. It will take several tries to get something that looks decent (but even the first try should taste good).&#060;/li&#062;
&#060;li&#062;It takes two days (at least) to make croissants.
&#060;p&#062;-15 min prep butter block&#060;br /&#062;- At least 1 hour back in fridge for butter block (can be prepped far in advance)&#060;br /&#062;- 15 minutes initial mix&#060;br /&#062;- 2 hours resting time&#060;br /&#062;- 30 minutes to roll&#060;br /&#062;- Overnight resting time&#060;br /&#062;- 45 minutes next day to roll, cut, shape, egg wash&#060;br /&#062;- 20 to 25 minutes bake time&#060;/p&#062;
&#060;/li&#062;
&#060;/ul&#062;
&#060;ul&#062;
&#060;li&#062;The idea of croissants is a layer of butter over a layer of dough. You then fold these things over together several times to create lots of layers.&#060;/li&#062;
&#060;li&#062;The dough is a bread dough - so it should be stretchy and fairly *tough* looking. If it looks like cake batter, something has definitely gone wrong. I personally do 3 C all purpose flour, 1 C bread flour.&#060;/li&#062;
&#060;li&#062;Watch the Martha Stewart videos on YouTube for how to roll, cut and shape.&#060;/li&#062;
&#060;li&#062;The whole idea is to &#060;b&#062;stretch &#060;/b&#062;the dough and butter layers at the same time with the rolling pin, when rolling.&#060;/li&#062;
&#060;li&#062;Definitely use the indent and roll method. Make sure the dough/butter is warm enough to stretch (but not actually warm).&#060;/li&#062;
&#060;li&#062;8 x 24 is a good size for rolling out the dough.&#060;/li&#062;
&#060;li&#062;The idea of shaping a croissant is to cut a long triangle and roll up from the base (widest part).&#060;/li&#062;
&#060;/ul&#062;
&#060;p&#062;&#060;u&#062;Croissants&#060;/u&#062;&#060;br /&#062;&#060;i&#062;yield ~12&#060;/i&#062;&#060;/p&#062;
&#060;p&#062;1.6 C milk&#060;br /&#062;.25 C sugar&#060;br /&#062;1.6 oz yeast&#060;br /&#062;4 C flour&#060;br /&#062;1 tsp salt&#060;br /&#062;12.8 oz unsalted butter&#060;/p&#062;
&#060;p&#062;&#060;i&#062;Prep Butter Block&#060;/i&#062;
&#060;/p&#062;
&#060;ul&#062;
&#060;li&#062;Pound butter into square flat block. A little less than a quarter inch thick. Return to fridge. This can be done far in advance - and you may be happier if you do it far in advance.&#060;/li&#062;
&#060;/ul&#062;
&#060;p&#062;&#060;i&#062;Make Croissants&#060;/i&#062;&#060;/p&#062;
&#060;ol&#062;
&#060;li&#062;Mix milk, sugar, and yeast (speed 2/medium). Wait until bubbles form.&#060;/li&#062;
&#060;li&#062;Add rest of ingredients and mix. Do NOT mix much.&#060;/li&#062;
&#060;li&#062;Rest in fridge 1.5 - 2 hours.&#060;/li&#062;
&#060;li&#062;Fold in butter block.&#060;/li&#062;
&#060;li&#062;Execute 3 turns.&#060;/li&#062;
&#060;li&#062;Rest overnight.&#060;/li&#062;
&#060;li&#062;Roll out, cut, and shape.&#060;/li&#062;
&#060;li&#062;Egg wash.&#060;/li&#062;
&#060;li&#062;Bake at 400 F for ten minutes (220 C), then reduce heat to 350 F (180 C) and bake for 10-15 minutes until well browned and&#060;br /&#062;
puffy&#060;/li&#062;

&#060;p&#062;1 lb hot Italian sausage&#060;br /&#062;! onion, chopped&#060;br /&#062;1 red bell pepper, sliced&#060;br /&#062;1 pkg penne&#060;br /&#062;3 garlic cloves, minced&#060;br /&#062;red pepper flakes to taste&#060;br /&#062;2 C chicken broth&#060;br /&#062;1 C white wine (cooking wine and dry reds work fine, too)&#060;br /&#062;1/2 C heavy cream&#060;br /&#062;8 oz broccoli florets&#060;br /&#062;1/2 C grated Parmesan&#060;br /&#062;2 t balsamic vinegar&#060;br /&#062;1 T finely chopped fresh basil&#060;/p&#062;
&#060;p&#062;1) Cook sausage over medium high heat, breaking into medium chunks, about 5 minutes. Transfer sausage to paper towel lined plate.&#060;/p&#062;
&#060;p&#062;2) Cook onion and pepper in rendered fat, about 8 min. Add penne and cook until pasta is lightly toasted, about 3 min. Stir in garlic and pepper flakes, about 30 seconds. Stir in sausage, broth, wine and cream and bring to a boil. Reduce heat to medium, cover, and simmer about 8 minutes.&#060;/p&#062;
&#060;p&#062;3) Arrange broccoli on top of pasta and continue to cook, covered, until broccoli is bright green and tender and pasta is al dente, about 8 minutes. Off heat, stir in Parmesan, basil and vinegar.

&#060;p&#062;I'm on a roast veggie kick. &#038;nbsp;I'll roast anything: kale, cauliflower, zucchini, sweet potato, mushrooms, broccoli, tomatoes, you name it. &#038;nbsp; &#038;nbsp;Olive oil, salt, and sometimes some red pepper flakes. &#038;nbsp; Roasted veggies are great in both lettuce and grain salads.&#038;nbsp;&#060;/p&#062;

&#060;p&#062;ETA: with all of the above talk about Kale, I almost forgot to mention my favorite from the last year. &#038;nbsp;&#038;nbsp;&#060;/p&#062;
&#060;p&#062;&#060;b&#062;Sausage Kale soup.&#060;/b&#062; &#038;nbsp; Saute one pound bulk sausage in Large pot. &#038;nbsp;Drain if necessary. &#038;nbsp;Add 1 diced onion, a few diced carrots, diced celery if you have it. &#038;nbsp; Add one bunch chopped Kale (I use about half to 2/3 of&#038;nbsp;a big pre-chopped bag) and 1 can of diced tomatoes drained. &#038;nbsp; Cover with chicken broth/stock (low sodium or homemade). &#038;nbsp; Add a bay leaf, some pepper (black or red), herbs (thyme or herbs du provence work) and bring to a boil. &#038;nbsp;Simmer for 20-30 minutes or until Kale is cooked to your liking and flavored have melded.&#038;nbsp;&#060;/p&#062;

				<description>&#060;p&#062;I improvised a yummy quinoa salad this summer. The dressing, which is what 'made' the salad was a combination of Garlic Expressions dressing and the juice of one orange.&#060;/p&#062;
&#060;p&#062;Oh, and my son made me some delicious Christmas presents this year. One was an outstanding paste made from smoked poblano(?) peppers and toasted pumpkin seeds. So delicious on our Christmas morning egg strata. Like really outstandingly delicious.

				<description>&#060;p&#062;We started eating grain-free and I've been making chicken &#034;breaded&#034;&#038;nbsp;in almond flour. Tastes and feels like fried chicken but without the flour! Follow a normal breaded chicken recipe but instead of white flour use almond flour.&#060;/p&#062;

I put 1 pack in a crock pot along with a can of Campbell's tomato and basil soup, a 1/2 cup of balsamic vinegar and 1 sliced onion in the crock pot and it's delicious. You could sub beef for the venison.&#038;nbsp;

&#060;p&#062;this was the first year of our garden in our new house&#038;nbsp;&#038;amp; it was bountiful, so we had lots of great veggies to work with. We&#038;nbsp;made our first sausage in the fall (brautwurst) &#038;amp; it turned out so good....so now i am excited to try making some new sausages next year with herbs &#038;amp; spices from our own garden.&#038;nbsp;&#060;br /&#062;For christmas I got a vitamix, and am so loving making the green smoothies!&#038;nbsp;&#060;/p&#062;

&#060;li&#062;11⁄2 cups chopped green chiles (anaheim/poblano mixed-roasted &#038;amp; peeled)&#038;nbsp;&#060;/li&#062;
&#060;li&#062;1⁄2 cup seeded, finely chopped roasted jalapeños&#038;nbsp;&#060;/li&#062;
&#060;li&#062;4 cups chopped onions&#038;nbsp;&#060;/li&#062;
&#060;li&#062;1 cup bottled lemon juice&#038;nbsp;&#060;/li&#062;
&#060;li&#062;6 cloves garlic, chopped&#060;/li&#062;
&#060;li&#062;1 tablespoon ground cumin&#060;/li&#062;
&#060;li&#062;3 tablespoons oregano leaves&#060;/li&#062;
&#060;li&#062;1 tablespoon sea salt&#038;nbsp;&#060;/li&#062;
&#060;li&#062;1 teaspoon black pepper&#060;/li&#062;
&#060;/ul&#062;
&#060;p&#062;Combine all ingredients in a large saucepan and stir until mixture begins to boil, then reduce heat and simmer for 20 minutes, stirring occasionally. Ladle hot into pint jars, leaving 1⁄2 inch headspace. Adjust lids and process in a boiling water canner: 15 minutes at 0–1,000 feet altitude&#060;/p&#062;

&#060;p&#062;Cauliflower fans: I also discovered this year that if you toss florets with a big glug of olive oil in a ziploc bag, you can then Shake and Bake them and roast. &#038;nbsp;Pretty good, and couldn't be easier. &#038;nbsp;Works with broccoli as well, and would probably work&#038;nbsp;with kale.&#060;/p&#062;
