I use the lemon curd recipe on cookinglight.com, although the non light versions may use more egg yolks. It's very easy. I like it really tart and add extra grated peel.

Make your own mayonnaise! I do it all the time. Or Caesar dressing...lots of other suggestions here already. Egg yolks have many minerals so add a couple extra to scrambled eggs. French toast is supposed to be made ONLY with the yolks so enjoy some for breakfast!

We get 3 eggs a day right now from our urban hens & these are great ideas for eggs in general. I'll be making lemon curd for sure! Then I'll have to make angelfood cake to balance it out. :)
We eat a lot of frittata and always throw an egg into veggie stir-fry.
You can freeze lemon curd after it's made. It makes a great filling for fancy cakes. I also like to swirl it through cheesecake.
My grandmother used to use egg whites for homemade angelfood cake and the egg yokes for pound cake.
Here is what i think is her recipe for a pound cake baked in a loaf pan:
Loaf o' Gold Cake
2 1/4 cups cake flour or 1 3/4 cups regular flour (sifted or measured by dip-level-pour method)
1 cup sugar
2 tsp. baking powder
1 tsp. salt
1/2 cup soft shortening (half butter)
1 tsp. vanilla extract
5 egg yolks (3/4 cup) unbeaten
3/4 cup milk
Heat oven to 350 degrees (mod.) Grease and line with parchment paper a loaf pan 9x5x3. Blend dry ingredients in bowl. Add shortening, vanilla egg yolks and 1/2 cup of the milk. (If using regular flour, add all milk at once). Beat 2 min. medium speed on mixer or 300 vigorous strokes by hand. Scrape sides ande bottom of bowl constantly. Add rest of milk. Beat 2 more minutes, scraping bowl frequently. Spoon batter into pan. Bake 60-70 minutes. Gool and finish with an orange glaze of 1/2 cup orange juice, 1/2 tsp. grated orange peel, and 1 cup sifted confectioners' sugar mixed and let to stand on top of the oven while cake bakes. When cake is baked and removed from oven, punch holes in the top surface with a fork. Pour on warm glaze a little at a time, over the top.

Another idea is Pot de creme au Chocolat, simple custard (it can be served with fresh fruit), homemade ice cream and Bavarian Cream desserts.

I know my friend freezes the whites to make meringue later. Not sure if you can do that with yolks. You could also just make yolk-rich scrambled eggs (including a whole egg or two) and I've also made yolk-rich baked goods - can't remember exactly what though - yellow cake uses lots of yolks I think?

Lemon curd. You can then make a lemon tart with it or just eat it on toast. I like it in my Greek yogurt for breakfast too. Actually I usually just use whole eggs (so as not to have leftover whites) but it is better with just yolks.
http://www.marthastewart.com/348239/lemon-curd

Or Creme brûlée, custard, pots au Creme, pretty much any custardy dessert....

I have the opposite problem -- too many egg whites! I store those in the fridge for up to a week while I put off making meringue.

My yolk-heavy favorites:

Lemon curd

Creme Brulee

and I use them in my cheesecake recipe.

Or just add an extra yolk or two when you make scrambled eggs, or make a puppy very happy (cooked for less risk).

I love to bake and have been baking a lot lately, particularly various fancy cakes for occasions like moving-out-of-the country parties etc. I am actually baking one such cake right now. The thing is that I end up making of lot of meringue/angel food cake type cake layers that can use up to 12 egg whites each and have a bunch of left over yolks that I do not know what to do with!

Any ideas for simple recipes? Can they be stored over longer time period/frozen etc. ? I feel bad throwing them away each time
