Thanks for the the links. I am going to do a combination of the nutted salad that was posted in another link with chickpeas and a veg-tofu pot pie with a mushroom gravy topped with puff pastry. Fingers crossed!

How about a Vegan Bean Cassoulet? Not a "pot pie", but this dish makes both a fabulous vegetarian entree (protein rich due to the white beans) and a terrific side dish for those who will be partaking in the turkey. I often make this dish when including vegetarian friends in our Thanksgiving celebration.

http://www.food.com/recipe/veg.....let-373286

I personally like to substitute sweet potatoes or yams for some of the red potatoes.

This is probably not quite what you're after, being not particularly American, but call it a wild card. I love this recipe but I've never mastered the caramel thing he does.
http://www.telegraph.co.uk/foo.....tatin.html

For a vegan option, lose the pastry and layer the potatoes British hot-pot style, and sub out the cheese for green peppers, chopped walnuts and an extra tin of tomatoes,

How about vegetarian Tamale Pie?

Filling: chopped onion, minced garlic, chili powder, cumin, 2c kidney beans, salt, tomato paste, black olives, corn, chopped bell pepper, chopped celery

Crust: boiling water, coarse ground corn meal, salt, chili powder, grated cheddar cheese

This is from Laurel's kitchen. I used to make it a lot. It's delicious.

I used to do an easy one- just mix cream of asparagus soup with frozen veggies and top with a roll out refrigerated crust, but you could add white beans to it for protein

Hmm one Christmas we did it as the vegetarian alternative to our usual tourtiere. I remember root vegetables and mushrooms in a white sauce and possibly a puff pastry lid. I frankly can't recall what if any higher protein ingredients went in. But it was probably chickpeas or white kidney beans (cannelini), or possibly chestnuts (very seasonal), walnuts or pine nuts.

Another special vegetarian dish is twice baked potatoes, with the potato flesh mashed with cannelini beans and put back in with the usual toppers.

We are doing Thanksgiving potluck with the classic American dishes for the first time and I have been assigned a vegetarian entree 'with some protein'. I was thinking of a pot pie with tofu or lentils added to it but before I go and experiment, I wonder if you have a tried and true dish.

And on another note, I am probably late to the game, but you all should try the self-saucing paste recipe!
