				<description>&#060;p&#062;I've been baking salmon or steel head trout covered in homemade salsa. It's a recipe from my older son and I'm not sure where he got the inspiration, but it's easy and really delicious. I am not a huge fan of salmon, but have been going to Sam's Club for groceries a lot over the last 4 months where I get a large piece of either of the above fish, and it's become a regular item on our menu.&#060;/p&#062;
&#060;p&#062;I make a basic tomato salsa using chopped campari tomatoes, lemon juice, olive oil, salt, cilantro, and garlic or minced onion. Can use immediately or let it marinate for a while or overnight. Place fish in a baking dish, cover completely with salsa, bake at 425 for about 12-15 minutes or more depending on size and thickness - till done!&#038;nbsp; Optional - pickle thinly sliced shallots (1 or 2) in rice vinegar (or other vinegar on hand) and salt, while you prepare and cook the fish. Distribute on top of the finished dish before serving. Adds some crunch and extra flavor.&#060;/p&#062;
&#060;p&#062;I have no idea how Danny became such a good cook, but I get a lot of my dinner ideas on the fly from him after he quizzes me on what i have on hand. A friend of ours said we should write a joint cookbook and call it, &#034;Just Cook This, Mom&#034;&#060;/p&#062;
&#060;p&#062;There was a good article not long ago in the Wall Street Journal about wines to drink with salmon. I tried one of the recommendations, an Oregon bubbly called Argyle, this weekend and it was very good.&#060;/p&#062;
&#060;p&#062;I've gotten less enthusiastic about cooking as time has gone on and on and on, but I can't say I miss going to restaurants much at all.

				<description>&#060;p&#062;I'm so late to this, but had to chime in that a version of Angie's curry has been my family's staple for years - and my mother before that. I mean like we cook it about every fortnight, usually to cover a few meals. our recipe has garam marsala, instead of curry powder, in the same way as Angie does. We make ours with beef mince (though I'll be trying it with turkey mince now). We always just called it &#034;mince curry&#034; - I didn't know its indian name.&#060;/p&#062;
&#060;p&#062;We always serve it with a version of lemon pickles in oil - in fact I find it a bit bland without it - and use lemon infused oil if I'm out of the pickles.

				<description>&#060;p&#062;For years chicken piccata has been a low fat way to prepare chicken breasts, served with pasta with CosCo pesto sauce and a tomato salad like caprisi salad.  This week we made salmon piccata about the same way with a salad heavy on arugula, tomatoes and Romano cheese shavings with added herbs like basil from the garden,  I thought it was a good way to use salmon, which was cooked on the grill with salt and pepper..  we have not yet grilled lettuce but love grilled beet slices as part of a grilled veggie salad.&#060;br /&#062;

&#060;p&#062;Here's my version of the chickpea recipe. A great pantry meal! Next time I'm going to add some frozen chopped spinach.&#060;/p&#062;
&#060;p&#062;&#060;div&#062;INGREDIENTS
&#060;ul&#062;
&#060;li&#062;&#060;div&#062;1 tablespoon extra-virgin olive oil&#060;/div&#062;&#060;/li&#062;
&#060;li&#062;&#060;div&#062;1 medium yellow onion, finely chopped (about 1 1/2 cups)&#060;/div&#062;&#060;/li&#062;
&#060;li&#062;&#060;div&#062;1/2 teaspoon fine sea salt, plus more as needed&#060;/div&#062;&#060;/li&#062;
&#060;li&#062;&#060;div&#062;1 tablespoon peeled grated/minced fresh ginger root&#060;/div&#062;&#060;/li&#062;
&#060;li&#062;&#060;div&#062;3 cloves garlic, pressed or minced&#060;/div&#062;&#060;/li&#062;
&#060;li&#062;&#060;div&#062;1 tablespoon garam masala (see NOTE)&#060;/div&#062;&#060;/li&#062;
&#060;li&#062;&#060;div&#062;1/8 teaspoon ground cayenne pepper (optional)&#060;/div&#062;&#060;/li&#062;
&#060;li&#062;&#060;div&#062;One 15-ounce can no-salt-added chickpeas, rinsed and drained&#060;/div&#062;&#060;/li&#062;
&#060;li&#062;One 15-ounce can coconut milk (regular or low-fat)&#060;/li&#062;
&#060;li&#062;One 15-ounce can tomato sauce or pureed tomatoes&#060;/li&#062;
&#060;/ul&#062;
&#060;/div&#062;DIRECTIONS&#060;div&#062;
&#060;p&#062;Heat the oil in a large, nonreactive skillet or Dutch oven over medium heat. Once the oil shimmers, add the onion and salt. Cook, stirring occasionally, until the onions are soft and translucent, 5 to 7 minutes. Add the ginger and garlic and cook until fragrant, about 1 minute. Add the garam masala and cayenne, if using, and cook, stirring constantly, until fragrant, about 30 seconds. Add the chickpeas and coconut milk. Taste, and add more salt if needed.&#060;/p&#062;
&#060;p&#062;Increase the heat to medium-high; once the mixture begins bubbling around the edges, reduce the heat to low to maintain a gentle bubbling. Mash up some of the chickpeas using a potato masher (this will help thicken the sauce -- but be sure to leave some of the chickpeas whole). Cook, stirring occasionally, until the sauce thickens and the chickpeas are very soft, about 20 minutes.&#060;/p&#062;
&#060;p&#062;Add the tomato sauce and simmer for 5-10 more minutes to let the flavors blend.&#060;/p&#062;
&#060;p&#062;NOTE: If you can't find garam masala, you can substitute this spice blend: 1 1/2 teaspoons ground coriander, 3/4 teaspoon ground cumin, 1/4 teaspoon ground turmeric, 1/8 teaspoon ground cardamom, 1/8 teaspoon ground black pepper, 1/8 teaspoon ground cloves and 1/8 teaspoon ground cinnamon.&#060;/p&#062;
