My husband’s fraternity brothers have come to expect them when they visit.&#038;nbsp;

				<description>&#060;p&#062;This is a super easy way to treat potatoes and a great ‘side’ for BBQ meats or salmon and a big green salad. &#038;nbsp;The family gives it a ‘10’ and this is how they want their potatoes when I give them the choice. &#038;nbsp;&#060;/p&#062;
&#060;div&#062;&#060;br /&#062;&#060;/div&#062;&#060;div&#062;Oven Roasted Potatoes&#038;nbsp;
&#060;/p&#062;
&#060;p&#062;In a bowl mix:&#060;/p&#062;
&#060;p&#062;1 tsp paprika&#060;br /&#062;1/2 tsp garlic powder&#060;br /&#062;1/2 tsp onion powder&#060;br /&#062;1/2 tsp cumin&#060;br /&#062;1/2 tsp salt&#038;nbsp;&#060;br /&#062;pepper (a few twists of the grinder)&#060;br /&#062;3 tblsp olive oil&#060;/p&#062;
&#060;p&#062;Peel or scrub 6-8 potatoes and cut into 1 inch squares, thick cut ‘fries’, or if potatoes are small - 1/2 inch coins. &#038;nbsp;You can use a serrater to get the ‘crinkle cut’ shape. &#038;nbsp;&#060;/p&#062;
&#060;/div&#062;&#060;div&#062;&#060;br /&#062;&#060;/div&#062;&#060;div&#062;Toss potatoes in the olive oil mixture, then dump everything onto a baking sheet. &#038;nbsp;Bake for 45 min in a 400deg. oven. &#038;nbsp;Potatoes should be crispy on the outside, and creamy on the inside.

				<description>&#060;p&#062;We are finishing 8th week of shelter in place and we've completely stopped eating out or ordering in. Every meal and snack that has been consumed in our house for the last 56 days has been home made. That's 168 breakfasts, lunches and dinners, 90% of which were cooked by me. So yeah, I've been cooking and baking a ton.&#038;nbsp;&#060;br /&#062;Today, I reached my personal Nirvana, cooking a homemade cheeseburger. Everything, including the bun was made from scratch = pretty proud of myself!&#038;nbsp;&#060;br /&#062;I've tried a lot of bread recipes so I will post some for you.&#038;nbsp;&#060;/p&#062;

&#060;li&#062;Before you start, set your oven to 220 degrees&#060;/li&#062;
&#060;li&#062;Measure out five cups of self-raising flour, then sift three times&#060;/li&#062;
&#060;li&#062;Add a pinch of salt as you sift the flour&#060;/li&#062;
&#060;li&#062;Fold in 300ml of cold cream&#060;/li&#062;
&#060;li&#062;Add 300ml of lemonade&#060;/li&#062;
&#060;li&#062;Keep folding the mixture together until the flour is all mixed in&#060;/li&#062;
&#060;li&#062;Put onto a floured board, cut into desired sizes and brush with milk&#060;/li&#062;
&#060;li&#062;Pop them into the oven for ten minutes or until golden brown, turning the tray once during cooking&#060;/li&#062;

				<description>&#060;p&#062;&#060;b&#062;Echo!&#060;/b&#062; I make that exact chocolate Bundt cake a lot! With cream cheese icing. BEST CHOCOLATE CAKE EVER. It's an incredible crowd pleaser. Great in the fridge, and freezes well without the icing too. I make two small Bundts because there are only two of us at home. I put one of the cakes in the freezer. Works like a charm!&#060;/p&#062;
&#060;p&#062;And I make the Lemon Bundt Cake a lot too. We love BOTH :)&#060;/p&#062;

&#060;p&#062;One Pot Lentil Soup&#060;/p&#062;
&#060;p&#062;Ingredients&#060;br /&#062;2 T water or oil&#060;br /&#062;2 cloves garlic&#060;br /&#062;2 small shallots&#060;br /&#062;4 large carrots thinly sliced&#060;br /&#062;4 stalks celery thinly sliced&#060;br /&#062;&#038;nbsp;3 cups yellow baby potatoes - bite size pieces (I never put these in)&#060;br /&#062;4 cups vegetable broth&#060;br /&#062;2 to 3 sprigs fresh rosemary or thyme (I use dried about 1/2 t)&#060;br /&#062;1 cup uncooked green or brown lentils&#060;br /&#062;2 cups chopped sturdy greens ( Kale, Swiss Chard)&#060;/p&#062;
&#060;p&#062;Directions&#060;br /&#062;Heat oil in large pot over medium heat.&#038;nbsp; Add garlic, shallots, carrots, celery.&#038;nbsp; Saute for 4 to 5 minutes.&#060;br /&#062;If using potatoes add them now and cook for 2 minutes.&#060;br /&#062;Add vegetable broth, rosemary, thyme.&#038;nbsp; Increase heat to medium and bring to rolling simmer.&#038;nbsp; Add lentils.&#038;nbsp; Stir.&#038;nbsp; Simmer for 15 to 20 minutes or until the lentils and potatoes are tender.&#060;br /&#062;Add the greens and cook for 3 to 4 minutes.&#060;/p&#062;

&#060;p&#062;One-Pot Lentil Soup - Extremely easy and fast.&#038;nbsp; Excellent.&#060;/p&#062;
&#060;p&#062;Homemade Veggie Burgers - I made two kinds.&#038;nbsp; Both are excellent and easy.&#060;/p&#062;
&#060;p&#062;I do not like to make things with lots of ingredients or that take hours to make.&#038;nbsp; I cook because we have to eat not because I enjoy it.&#038;nbsp; Also, we eat a plant-based diet.

&#060;li&#062;In a small bowl, combine orange zest, orange juice (the juice of the orange you zested should equal about 1/3 C) &#038;amp; boiling water &#038;amp; let stand for 10 minutes.&#060;/li&#062;
&#060;li&#062;Meanwhile, in a large bowl, whisk together the flour, sugar, baking powder, baking soda &#038;amp; salt.&#060;/li&#062;
&#060;li&#062;In another bowl, beat together the egg, butter &#038;amp; vanilla, then when the OJ mixture is ready, add that to this mixture, before stirring this mixture into the flour mixture just until moistened.&#060;/li&#062;
&#060;li&#062;Fold in the chocolate chips, then pour into the muffin tin &#038;amp; bake 12-15 minutes minutes or until a toothpick inserted near the center comes out clean.&#060;/li&#062;
&#060;li&#062;Cool in the pan on a wire rack for 10 minutes before removing the muffins from the pan &#038;amp; putting it them on the wire rack.&#060;/li&#062;
&#060;/ul&#062;
&#060;br /&#062;Chocolate Bundt Cake (My chocolate lovers rate this a 10/10, but my fruit lovers prefer a lemon bundt cake)&#060;br /&#062;Ingredients&#060;br /&#062;1 pkg chocolate cake mix&#060;br /&#062;1 small pkg instant chocolate pudding mix&#060;br /&#062;1/2 C vegetable oil&#060;br /&#062;1/2 C hot water&#060;br /&#062;1 C sour cream&#060;br /&#062;4 eggs&#060;br /&#062;1 t vanilla&#060;br /&#062;mini chocolate chips (optional)&#060;/p&#062;
&#060;p&#062;Mix together and beat for 2-3 minutes with a hand beater or in a stand mixer. Pour into an greased and floured bundt cake pan. Bake at 350 degreees F for 45 minutes. Let rest out of oven for 5 minutes before inverting onto plate. Cool and cover in chocolate icing, if desired.&#060;/p&#062;
