And as you suggested, in another pan I cooked mushrooms and shallots in olive oil, then combined them.  It was delicious!  My husband really liked it.  I need to make the garlic ginger paste as you've described.  Thank you for your delicious ideas.

&#060;p&#062;Sorry i didn't  see ypur question earlier.  Mostly i make it myself  after one or two months. Just peel ginger and garlic, put in coffee grinder with few teaapoons of water and blend. ( i so not have exact ratio but i try to have two inches of ginger for three pieces of garlic- i prefer ginger over garlic)&#060;br /&#062;
Then i put them in ice  cube trays, once frozen put in freezer friendly bag. My ginger/garlic cubes are usually equivalant of 1 tablespoon.&#060;/p&#062;
&#060;p&#062;Here is another link which shares the process with visuals but with its own ratios.&#060;/p&#062;
&#060;p&#062;However i always always keep pre made ginger, garlic and ginger-garlic paste at home. As it is base ingredient of my many many dishes, specially when i am making traditional pakistani/indian foods.&#060;br /&#062;
 They are easily available are local asian/south asian stores.&#060;/p&#062;

&#060;p&#062;Joy, as I mentioned earlier, my blood sugar was slightly elevated so I need to get on top of the situation.  It's good to know that you can eat quinoa.  Do you avoid even brown rice?  I went to my favorite Thai restaurant the other day and ordered brown rice.  It actually was a mixture of brown and red rice, and was delicious.  But perhaps I should skip it.  I have been avoiding sugar, alcohol, bread and potatoes.  The side benefit is I've lost some weight.

				<description>&#060;p&#062;As a diabetic who cannot eat any rice, I like quinoa or steamed cauliflower as a rice substitute with take out Asian food.  We also use it a lot cold for salads adding whatever leftovers and garden fresh herbs are on hand.  It is a good side dish with roasted chicken with toasted nuts and some dried fruit added.  Look for tagine recipes.

Quinoa does seem an interesting substitution for rice.&#060;/p&#062;

				<description>&#060;p&#062;DH is diabetic so we use quinoa instead of rice. I know it's still quite a few carbs, but it's only 1/2 the carbs of rice.  He has type 2, so his care team allows him some carbs with every meal. I've had to start learning about high fiber foods and whole grains, and how to feed him stuff that he likes while still keeping his blood sugar under control. Quinoa has been a way to have easy meals (stirfry, beans &#038;amp; rice) while still respecting his treatment plan.

				<description>&#060;p&#062;Yum, quinoa! A good way to make it sweet is to mash a banana, add warm quinoa, and mix well. Top with a cup of blueberries (or mix in, but then the whole thing turns purplish pink). Totally delicious and dessert-like, and healthy at the same time.&#060;br /&#062;
On the savory side, I use it pretty much like I do brown rice. If I just want a filler, brown rice works fine. If I'm looking to increase the protein profile of the meal, then quinoa is my best bet.

&#060;p&#062;Here is how i generally cook it on weeknights&#060;br /&#062;
-- i cook the way it says on bag. Super easy.  But instead if water i use chicken or vegetable broth. It add ao much flavour to plain quinoa.&#060;br /&#062;
Somedays i just add a stock bullion to water and quinoa.&#060;/p&#062;
&#060;p&#062;-- in another pot, i add chopped onions. Saute them until translucent.&#060;br /&#062;
-add ginger garlic paste. Saute dir a minute.&#060;br /&#062;
-- add chopped vegetables ( my go to are: chopped broccoli,diced carrots, mushrooms and olives) and saute a bit more,&#060;br /&#062;
-- half a teaspoon cumin seeds&#060;br /&#062;
-- dash of cayenne pepper&#060;br /&#062;
--- half teaspoon of powder black pepper&#060;br /&#062;
 And then i add cooken quinoa from other pot. Stir and mix.&#060;br /&#062;
At this point in taste for salt, because my broth usually has aome and i add if i need more flavour. And its done.&#060;/p&#062;
&#060;p&#062;I also use cooked quinoa to add some body to soups. &#060;/p&#062;
&#060;p&#062;Cooked and cooled quinoa can also be used as a salad with your favourite cruncy diced vegetables. &#060;/p&#062;
