We had a nice lunch of chicken breast that I browned, then cooked with mushrooms in white wine and homemade vegetable broth, a little salt, cracked black pepper, celery seed and basil. I made the juices into a gravy, and served it with a spinach salad with a balsamic vinaigrette dressing and wheat toast.
Tonight I am making a meatball soup, I think.

Yesterday I made lemon chicken , the simplest of recipies and we ate it with lentil stew and "baked peppers". ( These are peppers fryed withoud grease on a metal sheet and then marinated in vinegar and oil with mustard beans and other condiments. My future MIL made these for us in the autumn) . This day we ete omelette and salad at breakfast, we ate out at lunch and at the dinner we finished the yesterday's peppers. Pretty easy and low cook weekend.

Making a pot of potato soup, cause it's actually cold here in Georgia for a change!
We like it with homemade bacon bits, cheddar cheese and sour cream on top. Served with french baguette, butter and garlic.

Nancylee, your comment tickled me that the empty nest has its perks -- not cooking every day! We love that too!

DS went back to college Saturday, so we are empty nesters once again. DH heated up a bowl of leftover chicken soup I'd made the day before (he's trying to lose weight), while I had some bruschetta and olives with a glass of wine!

The empty nest has it perks. You don't have to cook every night!

Cooking is one of my loves, I find it relaxing and a creative release. Yesterday I made a roast tomato sauce to have with pasta, a rhubarb compote for breakfasts and a saltana loaf for snacks during the week

Wow, Brenda, you are so industrious!

It was cold out so I made some spicy food: enchiladas with homemade sauce using roasted peppers and tomatillos. Yum.

And then, because that wasn't enough, I made double chocolate brownies.

Clearly, my new year's resolution to eat more sensibly isn't working out so well.

Mmm, C1 that looks delicious. I am wondering what it tastes like. Khris, your frittata sounds yummy too. I've never thought about freezing eggs--that's a great idea. Diana, I envy your dinner. DH won't even let me bring kimchee in the house. I have to eat it in the garage.

I made chicken soup with celery, green onions, stewed tomatoes, corn and carrots. It's a great warm you up kind of meal. I like it with crushed tortilla chips on top. I also made "Homey Apple Bundt cake" with walnuts.

My new favorite breakfast is oatmeal with egg whites and raisins. Has anyone tried that? OMG, I can't wait to get up in the morning to eat it. Gosh, I'm so food oriented. I wish I didn't love it so much!

Good topic! I always cook a bunch of stuff on the weekend so that we have something to eat during the week. Today I baked salmon that we will use cold in a salad during the week, made a dish called walnut chicken (sort of like orange chicken) that we ate almost completely, and an Italian-style stew from beef shanks. DH is asking me to make a mushroom soup tomorrow (waving at Lyn).

C1: Yum! Idly is delicious! Sadly, my Indian friend at work moved back to India so she no longer brings me delicious things like idly at lunch...

This evening, I made Kimchi Jigae (Korean kimchi and tofu stew) for dinner since I was having a craving for it. I'm planning on making Chinese pan-friend buns (like the steamed ones but you make them in a skillet instead of a steamer) tomorrow, and maybe some type of baked good. I've also made chili, beef stew, and burritos in the past week, among other things.

Sounds yummy!
I actually haven't cooked anything yesterday or today because it's my birthday. Yesterday, hubby brought dinner home, and today my parents took me out to eat. I did make a nice Fritata this week and freeze it in slices so that I could have it for breakfast. I used onion, mushrooms, spinach, and zucchini suateed in white wine and grape tomatoes, smoked Gouda cheese cracked black pepper and sea salt. It was a great idea, and I am going to try and keep remembering to do this.

I've done a fair amount of cooking/baking in the last 36 hours, so I thought it would be fun to share what we've been making recently.

Yesterday I made idly, a spongy fermented rice/lentil cake, and two traditional accompaniments: sambar (a vegetable stew of sorts) and coconut chutney

not my picture, but for reference: http://3.bp.blogspot.com/_LlQ8.....hutney.JPG

today I baked a pumpkin cheesecake (haven't had it yet, it's cooling in the fridge), which sadly cracked. I wanted to do the water bath method but couldn't find a pan big enough to fit the springform! and it's a "low-fat" cheesecake, using neufchatel and cottage cheese (you run the cottage cheese through the food processor to make it smooth), so I'm quite curious to see how it tastes!

And I also made carrot onion fritters for dinner.

Over to you!
