				<description>&#060;p&#062;Yesterday we had cauliflower in tomato sauce over a bed of pearl barley. Tonight, I turned the leftover barley into a stir-fry dish with onions, peas and fried egg and served it with feta cheese stuffed portabella mushrooms. Tomorrow is hubby's turn so we will most likely eat leftovers.  <span aria-hidden="true" class="emoticon emoticon-smile icon-emoticon-smile "></span>

&#060;p&#062;My main cooking feat of the week was making my first ever loaf of bread - Irish Brown Soda bread. I'm sitting here eating it with vegemite right now. Is that sacrilege?&#060;/p&#062;
&#060;p&#062;I also cooked up a big pot of Jamie Oliver's Leek and Chickpea soup on Monday. That's kept me going for a few meals.

We change it by omitting the chickpeas and onions, putting little chunks of crispy-fried tofu on top instead, and putting a bed of greens underneath the quinoa.  Yum.

&#060;p&#062;Dinner yesterday was mixed grilled vegetables tossed with garlic oil and herbs over whole wheat tagliatelle, with a green salad with spring onion, roasted pine nuts and peppadews (love the bright red against the green) served with small mozzarella balls.&#060;/p&#062;
&#060;p&#062;Today is leftovers day;-)&#060;/p&#062;
&#060;p&#062;P.S. I had to look up Marie Rose sauce, Angie, that's basically what we call &#034;cocktailsaus&#034; I think, although that usually contains a bit of whisky. I love it on prawns too! (and on cold salmon)

				<description>&#060;p&#062;last night was an easy dinner inspired at Trader Joes.&#060;br /&#062;
They were sampling a container of fresh mixed chopped veggies with oil and basalmic on  it. I bought the veggies and tossed them with their new low-fat Champagne Vinaigrette, slivered almonds and a diced orange.  I served it with roasted chicken breasts basted with the same dressing.  Popped a loaf of yummy bread from Trader Joes in the oven to warm and viola... dinner on the table!&#060;/p&#062;

				<description>&#060;p&#062;I love to cook too, and don't get to cook much during the week. Saturday I spent a couple hours making Mark Bittman's new Chicken Dinner recipe in a recent NY Times.   It was fine, but definitely not worth the work.  I'd rather just roast a chicken and some veggies!&#060;/p&#062;

				<description>&#060;p&#062;DH has been having to do the cooking as I've been struck down with horrible stabbing hip pain, thus brain-fogging pain killers.  MRI this afternoon.  He's actually a very good and adventurous cook but has a long work day.  We will probably have leftover scallopini made from pork tenderloin.  Between DH's low fat diet and my low carb we do everything from scratch.  Vani, I love Aloo Palak and that it can be made lower fat. I've got to try that! I can't eat even small amounts of rice but substitute chopped steamed cauliflower.

&#060;p&#062;Lately I've been doing a lot of broiled white ruffy on a bed of baby spinach. It's fast, easy, and the fish has a mild flavor that takes different marinades well, so I can switch it up. &#060;/p&#062;

I also will be marinating some chicken to grill for tomorrow night's dinner. The simpler the better with my unpredictable work schedule and all the furniture assembly and unpacking (even after 2 months!) going on at home.

				<description>&#060;p&#062;I'm on a cooking kick this week- I was going to make a pork roast with honey glazed carrots and apple compote yesterday, but then I realized that my roast is almost 8 pounds and I didn't have time to cook it. So, I made a double batch of the apple compote and served that with pancakes and bacon for dinner- we will have the rest with the pork roast tomorrow. Today, I'm making Coq Au Vin from Curtis Stone's recipe. I've been thinking about a spring potluck that we have in a couple of weeks. I think that I am going to make Mac N Cheese 'cupcakes' (have made these before and they are great bring along food), and some sausage shish kebobs.&#060;br /&#062;
