&#060;p&#062;Ghirardelli is indeed a US company, but was founded by an Italian, Domingo Ghirardelli in 1852.  After living in Europe for 12 years and sampling some of the best chocolates in the world, I have to say that Ghirardelli is among the finest.  ESPECIALLY their unsweetened cocoa which I use for my killer brownies.

				<description>&#060;p&#062;I LOVE chocolate.  Pure dark chocolate is the best!  &#060;/p&#062;
&#060;p&#062;In  restaurants I'm not so fond of the death-by-chocolate type desserts, and I agree that chocolate cake is just sort of meh.&#060;/p&#062;
&#060;p&#062;I think I like the intensity and the smooth texture of dark chocolate, and I let it slowly melt in my mouth, YUM!&#060;/p&#062;
&#060;p&#062;Barbara, I think that Ghiradelli is actually an American (San Francisco) chocolate, although it has an Italian name.&#060;/p&#062;
&#060;p&#062;One of MY favorite chocolates also has a European name, but is also made in San Franciso: Scharffenberger.  .........

				<description>&#060;p&#062;Deb, if you like white chocolate peppermint bark, you'll LOVE this recipe, from Food Network's Ina Garten:&#060;br /&#062;
Ingredients&#060;br /&#062;
    * 1/2 cup walnuts&#060;br /&#062;
    * 16 ounces very good white chocolate, finely chopped&#060;br /&#062;
    * 1/4 cup dried cranberries&#060;br /&#062;
    * 1/4 cup medium-diced apricots&#060;br /&#062;
Directions&#060;br /&#062;
Preheat the oven to 350 degrees F. Using a pencil, draw an 8 by 10-inch rectangle on a piece of parchment paper placed on a sheet pan. Turn the parchment paper over so the pencil mark doesn't get into the chocolate.Place the walnuts in 1 layer on another sheet pan and bake for 8 minutes. Set aside to cool and then chop roughly into large pieces. Place 3/4 of the chocolate in a glass bowl and place it in the microwave on high power for 30 seconds. (Don't trust your microwave timer - time it with your watch.) Stir with a rubber spatula. Put it back in the microwave for another 30 seconds and stir again. Continue to heat and stir every 30 seconds until the chocolate is just melted. Immediately, add the remaining chocolate and allow it to sit at room temperature, stirring often, until it's completely smooth. (If you need to heat it a little more, place it in the microwave for another 15 seconds at a time.) Pour the melted chocolate onto the parchment paper and spread it lightly into the drawn rectangle. Sprinkle the top evenly with the cooled walnuts, the cranberries and apricots. Set aside for at least 2 hours until firm, or refrigerate for 20 minutes. Cut the bark in 16 pieces and serve at room temperature.&#060;/p&#062;
&#060;p&#062;I used Ghiradelli White Chocolate which is formulated for baking (good for eating, plain, too).  This bark makes a fabulous gift!

				<description>&#060;p&#062;AJ:  here's the best brownie recipe, EVER, from Food Network's Alton Brown:&#060;br /&#062;
Ingredients&#060;br /&#062;
    * Soft butter, for greasing the pan&#060;br /&#062;
    * Flour, for dusting the buttered pan&#060;br /&#062;
    * 4 large eggs&#060;br /&#062;
    * 1 cup sugar, sifted&#060;br /&#062;
    * 1 cup brown sugar, sifted - I substituted SPLENDA - brown sugar is hard to sift!&#060;br /&#062;
    * 8 ounces melted butter - (2 sticks)&#060;br /&#062;
    * 11/4 cups cocoa, sifted - I used Ghiradelli's UNSWEETENED COCOA&#060;br /&#062;
    * 2 teaspoons vanilla extract&#060;br /&#062;
    * 1/2 cup flour, sifted&#060;br /&#062;
    * 1/2 teaspoon kosher salt&#060;br /&#062;
Directions&#060;br /&#062;
Preheat the oven to 300 degrees F. Butter and flour an 8-inch square pan.In a mixer fitted with a whisk attachment, beat the eggs at medium speed until fluffy and light yellow. Add both sugars. Add remaining ingredients, and mix to combine. Pour the batter into a greased and floured 8-inch square pan and bake for 45 minutes. Check for doneness with the tried-and-true toothpick method: a toothpick inserted into the center of the pan should come out clean. When it's done, remove to a rack to cool. Resist the temptation to cut into it until it's mostly cool.&#060;/p&#062;
&#060;p&#062;PS After I successfully made this recipe, I substituted one block of low-fat cream cheese for one of the sticks of butter.  Viola!  Chocolate cheesecake brownies.  They were to die for!  It is important to use UNSWEETENED Cocoa and to sift the dry ingredients.
