Kari, that is very true about the tea balls! I suggest them to new-to-loose-leaf-tea drinkers because they are just so much simpler hehe. Ideally, you'd leave the tea leaves to float loose in the brew and either strain out or even drink around them, but I find the tea balls are a great time saver. As long as you don't overfill, they have room to expand; I usually suggest half full, though some teas unfurl to a much larger size than others (for example, white teas need much more room than say a crushed darjeeling).

Alicat, no problem! If you have any questions feel free to ask me, I do loves me my tea ^^

San if you like the taste of orange pekoe there is a lovely tea, totally herbal that tastes exaclty like it. No tannin or caffeine. It only comes in tea bags as far as I know though. (Caf-Lib; Laval, Que; 1-888-ID-FOODS).

My introduction to tea (properly brewed loose-leaf tea, as opposed to tea out of a bag that I'd let steep for far too long and wondered why it tasted so bitter) was on my first trip to London. We had a tea luncheon at the Orangery at Kensington Palace, and the food was delicious, and the setting was gorgeous. So I suppose that kind of colored my tea experience forever - I always think back to that trip as the event when I really fell in love with tea.

San, I'm just the opposite. I can't stand the taste of coffee, but moreover, the caffeine in coffee hits me all at once like a big jolt (kind of similar to the shaky feeling I get after I've used an inhaler), and I'm antsy and shaky all day. With tea, it comes on gradually, and I hardly notice a difference on mornings when I start the day with a non-caffeinated tea instead.
I'm glad that there are some teas that work for you! There are lots of delicious hebal teas. One of my all-time favorites, Honeybush Vanilla, is an herbal blend.

The rash happens with green tea and the regular Lipton tea. Herb teas seem to be ok for my skin and we drink Tension Tamer at night. I'm guesssing it is the tannin in tea that causes my problem. I find tea to have more of a caffinated effect on me than coffee, do you?

San, how strange! All types of tea, or even those that are low on caffeine?

I'll keep an extra pot of hot chocolate steeping for you, okay?

Aida, I think you know way more about tea than I do! The only thing I've heard differently is that a lot of loose-leaf tea sellers do not recommend using a tea ball (even a large one) but recommend using a strainer/infuser instead, as this gives the tea leaves more room to expand, apparently.

@ Lynne - of course! I have a small collection of teacups bought (or made, in one case) at memorable occasions or stores, and I'm sure they'd make an appearance at any tea party.

Yay! What a great tea collection Kari I feel there is no such thing as "too much tea." I've got a lazy susan shelf (plus some pantry space) full of tea and host tea parties several times a year 0:) I think we should have a YLF tea gathering sometime since so many of us love tea!

Not to hijack, but:
Alicat - Tea generally keeps in good condition for a year, after that its flavor starts to deteriorate. But it can depend on the tea; I have several teas that are a couple years old that have lost almost no flavor, and I still happily drink them often. If the teas are good quality, kept sealed in an airtight container, and not terribly delicate (like white teas, and some of the lighter greens) then they should be fine to drink If kept out of an airtight container, they last 2-6 weeks before the tea starts to break down.

As far as brewing, I suggest getting a large tea ball. You'll probably need to experiment with how much tea works for the strength you desire, but I find a 2" tea ball filled halfway is great for a 16oz mug If you want it stronger, add more tea (sizing up on the tea ball if it's needing to be filled more than halfway), but do not brew longer (too-long brewing leads to bitter tea!).

If these are green teas, my suggestion for the prefect steep: Fill your tea ball no more than halfway. Prep your water to just-before-boiling temperature (if it's too hot those teas get bitter). Give the tea in the ball a quick rinse with the hot water by pouring a little water on and shaking the tea up. Fill your mug up with the water, and pop in the tea ball. Let brew for 30 seconds - 2 minutes (depends on the tea, I generally do 30 seconds while moving the tea ball around in the water which gives me 6-8 mugs!). Remove. Enjoy :)

For black teas: same process, use boiling water and steep 3-5 minutes instead.

Serious question, you're obviously an expert: how long does tea keep? I have several sealed containers of loose tea that were gifts from Asian friends after their trips home. I've never opened them because I wasn't sure how to make tea without a tea bag! Would they still be good after a few years? I don't know how to get started with them.

This is what I got with the extra shelf and the bottom mount. It's a bit pricey but I was quoted $250 for a custom made one and I think this will be better. My cupboard is a bit over 8" wide but I need to clear the hinges so ordered 7.5". They have some really cool cupboard inserts. I had two custom made and wish I had seen this first as I like the pull out shelves and they are less expensive than the ones I had made.
