Crepes are really not difficult to make- hot pan, and just enough batter to coat the bottom seems to be the trick. I used my cast iron skillet because it has a nice patina, so nothing sticks to it. But I use cast iron for just about everything to get the extra iron.

That sounds yummy! A friend of mine made crepes recently and that and your post make me want to revive my long lost crepe making skills. I actually learned in high school French class how to make crepes but haven't made them since college.

That sounds delicious, Khris. Unfortunately crepes is too high maintenance for my lifestyle

Yum. I love crepes but refuse to make them for family when the son eats well a zillion might be a bit of an exaggeration but not much.

I use tortillas and cover with hollandaise sauce of a cheese sauce and cook in oven instead.

There used to be a postage sized crepe restaurant here in town that made the best crepes ever, ham with cheese and asparagus was usually my choice.

Thanks for sharing.

The apples sound awesome.

Sounds great! I nuked a box of Lean Cuisine and then reheated a slice of thin crust pizza for a late snack when that wasn't enough

I am already drooling at your description - unfortunately, I can't cook western food and this sounds really hard! Glad you enjoyed it!

Yummy! We do crepes for dinner quite a lot. My daughter loves them with berries and powdered sugar, my son has cheese in his, and the SO and I do mushrooms, spinach, etc. Breakfast for dinner FTW!

I wanted something light for dinner, and am tired of making the same things over and over. Tonight, I made baked ham and cheese crepes and served them with some spiced apples. OMG- *so* good! The apples were simple- I just cored and peeled some apples, and boiled them in a sweet white wine and some water with a little vanilla and some spices- cinnamon, nutmeg, allspice and cloves. I used a recipe that I found online for savory crepes (milk, eggs, salt, pepper and butter), sauteed mushrooms, diced onion and minced garlic in some sherry until it was all soft, and made a sauce from non fat greek yogurt (which was a substitution for sour cream), mustard, salt and pepper. Once the crepes were all cooked, I put two little pieces of thin sliced honey ham on one, spread a little sauce, put in a little of the mushroom mix and half a slice of Havarti cheese and rolled them up in a baking dish. I topped them with a little cheddar cheese and baked them in a 350 oven for 20 minutes.
TO DIE FOR!
