viva, it's all a matter of perspective... growing up I always thought that the preppy life in New England would be pretty glamorous!

KM, sadly I have never been to Brazil. My mother is British. She was living in Rio with her parents, teaching English, and my dad was working for Union Carbide. They met in Rio and two of my sisters were born there. We joke about how our family has two histories -- the glorious international years (which I was not really a part of) and the preppy Connecticut years (which, sadly, were my legacy).

viva, that's so cool about your family! Where in Brazil? Did you ever go there?

Thistle, yes, condensed milk is sold in the baking aisle, and Carnation is usually the main brand there. They also sell evaporated milk in similar cans, so it's important not to mix them up. But my favorite brand is La Lechera, which is Nestle's brand for Latin America (sold here, often in the Hispanic/Mexican food section of grocery stores). It's much thicker and already has a caramelized taste. Carnation is not bad (it's also Nestle). But the other day I got a fancy organic one at Whole Foods and it was a disappointment... thin and too milky-tasting, not enough sugary caramel notes.

Condensed milk, is that the carnation stuff in the baking aisle?

Sorry, born and raised here in the US

KM, my parents met in Brazil and two of my sisters were born there, and my family lived in Mexico City when I was a toddler. So even though I grew up mostly in Connecticut, one of our household treats (besides homemade corn tortillas) was cajeta -- which we made exactly as you described, boiling the can (just in a pot of water, though) until the condensed milk became thick dulce de leche. Oh, to be the lucky one who got her spoon in first!!!!!

KM..I just emptyed a can of condensed milk into a pan and let it cook on low heat, stirring often until the condensed milk reduces in amount and turns a more carmel color..like a thick sauce...This is really good on fruit or cake...

Ah, this brings back childhood memories of my paternal grandmother. She would make us pancakes and spread butter on it, then sprinkle sugar, then drizzle condensed milk on top. Sugary goodness!

I missed that. I'm a big fan of condense [stet] milk too (that's what they call it in the islands). So it's buttered toast and dulce de leche as second spread?

crutcher, yes, I couldn't "picture" the flavor, so I had to try! How do you caramelize the condensed milk? In Brazil people used to boil the unopened can inside a pressure cooker to make dulce de leche. It was amazing, but I don't have the courage to try it at home (if you do it wrong, the can explodes!)

Angie, I don't know if I did it right! I used some soft dinner rolls and toasted them slightly before putting the butter and condensed milk. It tasted so good and it all melded together in a way I didn't expect. I might have found a new addiction!

Isn't it DIVINE. We've had it three times since we came back (and I am very liberal with the butter and condensed milk). Glad you enjoyed it, KM.

Being from South America I'm a huge fan of condensed milk (it's much more popular and widely used there than here; they even make little individual sachets that you can eat on their own). So when I saw Angie's HK post about her dessert of buttered toasted bread with condensed milk, I had to try it... and it really is delicious!
