				<description>&#060;p&#062;We had spicy chicken/veggie soup with roasted brussel sprouts. For the first time ever, I bought the stalk instead of the frozen bagged sprouts. Quartered them, tossed them in olive oil and roasted in the oven. OMG, heaven! Way more work but totally worth it every once in awhile.&#060;/p&#062;
&#060;p&#062;@Khris: That cauliflower sounds delish. It's one of, scratch that, it is my least favorite veggie but I think I'm going to give that a try! Thanks for the inspiration. Will report back.

				<description>&#060;p&#062;I just finished dinner, and had to post again. This was *so good* that I might make the whole thing for my dad's birthday.&#060;br /&#062;
Velvetychocolate- I boiled the cauliflower with a clove of elephant garlic. Toward the end, I added a cube of veggie boullion. I drained most of the water, then added butter. I mashed the cauliflower with my potato mashed, but ti was still chunky. I took a little at a time and blended it in the blender with a little milk. Once it was all pretty creamy, I poured it into a baking dish and sprinkled some parmesano/regiano chesse on top and baked it until the top started to get golden. It worked great.&#060;br /&#062;
This Tiramisu is my new favorite desert- and it's easy.&#060;br /&#062;
I soaked the lady fingers in a Kahlua and Espresso mix and put them in the bottom of wine glasses. The Tiramisu layer is just a carton of mascarpone mixed with most of a jar of Nutella and folded into fresh whipped cream with a little sugar- between the layers is some vanilla bean ice cream and on top is a little shaved dark chocolate. This would be an impressive Valentine's Day dessert.

				<description>&#060;p&#062;LOL-- I thought I was going to have something fabulous to contribute---- I was going to make my shrimp penne in a tomato and butter wine sauce. Then I got the shrimp out of the freezer only to find they were bad (we buy and freeze when they are inexpensive, but apparently my father isn't the right person for that job-- what a frostbitten mess). So, switched to chicken-- with the same result. &#060;/p&#062;
&#060;p&#062;I guess we are having deer meat again  . . .  because that was pretty much the choice! The flavors are a little strong for that wine and butter sauce though! &#060;/p&#062;
&#060;p&#062;at least I cleaned out the freezer.

				<description>&#060;p&#062;One of the few dishes I do well (DH does 95% of the cooking)  is a baked chicken&#038;amp;rice. Butter/margarine  a rectangular pan (appx 9x13 or similar) pour 1 and 1/3rd cup of quick cooking (instant) rice into pan, add 1/2 cup of milk, 1 can of cream of mushroom and 1 can of cream of chicken soup (somewhat heated &#038;amp; mixed together) over the rice, put chicken (either pieces or cut-up fryer) over that, sprinkle one pack of dried Lipton onion soup over the chicken, cover with tinfoil and bake at 350 for 2 hours! DELICOUS! And oh, SO easy  <span aria-hidden="true" class="emoticon emoticon-smile icon-emoticon-smile "></span>

				<description>&#060;p&#062;Oooh....good luck with your mashed cauliflower! I never liked cauliflower, but when I began reducing refined carb intake, I started eating a lot more vegetables, and they aren't so horrible after all :)&#060;/p&#062;
&#060;p&#062;Sorry to hear about the gout...ouch. The meatloaf actually tastes best made with ground bison, but it is kind of expensive. I didn't like it much with ground beef (grass-fed or otherwise)...hence the turkey. &#060;/p&#062;

				<description>&#060;p&#062;How do you make your mashed cauliflower? I've done roasted garlic and caramelized onion roasted cauliflower in the oven and it's quite good. When I mash it up, I just add a wee bit of chicken broth or vegetable broth, but it looks more like &#034;hash browns&#034; than anything like mashed potatoes. That said, I do try to avoid too much dairy, as it doesn't always agree with me. &#060;/p&#062;
&#060;p&#062;Tonight's dinner? &#060;/p&#062;
&#060;p&#062;A paleo version of meatloaf - this time I'm using ground turkey. Made with a bit of almond flour, sauteed grated carrot/zucchini/onion/garlic, egg, oregano, ketchup. &#060;/p&#062;

&#060;p&#062;Just delicious! I've made it with ground bison, with grass-fed beef, and now turkey. Now, to make things interesting and useful/helpful... I started making the meatloaf in mini-loaf tins. Everyone gets their own little mini/individual sized meatloaf, and I don't have to worry if it crumbles a bit when being sliced. Also - just fabulous to send in my husband's lunch the next day. *disclaimer: I do not make my own homemade ketchup as per the recipe, and I also do not add honey to the glaze. I just use organic (non-HFCS) ketchup and tamari for the glaze. &#060;/p&#062;
&#060;p&#062;Along with the mini turkey meatloaf, I'm also making roasted butternut squash. I buy the fresh butternut squash that's already pre-cubed from Costco, toss into a bowl - microwave for just a minute or two to warm it up (there's a reason for this...) plunk some coconut oil on top and stir like mad so the coconut oil melts and coats all the cubes of squash. Next I sprinkle cinnamon through it all and toss to mix it all up. Transfer to a parchment lined cookie sheet and bake for half an hour or so. Very tasty! If you wanted to get fancy with this, you can add apple chunks too and/or some chopped pecans.  <span aria-hidden="true" class="emoticon emoticon-smile icon-emoticon-smile "></span>

I'm loving Buddy the Cake Boss' new cooking show, so I am going to try some of his recipe's tonight:&#060;br /&#062;
Escarole with sweet Italian sausage, pine nuts and golden raisins&#060;br /&#062;
which I am serving with mashed cauliflower with grilled veggies, garlic cheese toast, and I am going to try Buddy's 5 minute Tiramisu for dessert.&#060;br /&#062;
The tiramisu is taking me way longer than 5 minutes because I couldn't find Lady Fingers at the bakery, so I baked them from scratch. I already have the Mascarpone mix setting up in the fridge, so dessert is already under way.&#060;br /&#062;
