				<description>&#060;p&#062;Also (you know this already because you're Indian!) use fresh spices if possible.  Add half at the start and half at very end for flavor boost.  No powdered garlic, onion, etc.  If you have a crockpot and can let it slow cook all day even better.  My MIL puts in pinch of sugar and it somehow brings out more flavor too.

&#060;p&#062;I like to just cook down whole tomatoes with garlic &#038;amp; basil, puree it and add a touch of olive oil then simmer some more.  It's not really good for a weeknight.  &#060;/p&#062;
&#060;p&#062;I also read somewhere (Martha Stewart I think) that the quality of tomatoes used in cans of whole tomatoes is much better than the ones they use in cans of puree.  Not sure if it's true or not, but it does make sense.

				<description>&#060;p&#062;A couple of suggestions... use GOOD canned tomatoes (whole or crushed) in a puree.  Let the sauce simmer for a while to evaporate the water and for flavors to come out.  &#060;/p&#062;
&#060;p&#062;If you want to use fresh tomatoes use either plum or small grape tomatoes. Cut and roast them with olive oil, garlic, salt, any herbs that you like and a tiny bit of balsamic vinegar (which you can use in the sauce above as it brings out the flavor in tomatoes). This sauce will be chunky, but very tasty.&#060;/p&#062;

				<description>&#060;p&#062;Do you like mushrooms?  I find they really help add body and richness to a meatless sauce.  Just chop them up, and fry them in some oil with onion and garlic before adding the tomatoes and whatever other flavorings.  Also, try adding some wine as well - will add flavor and some tanginess.  Red has a stronger flavor, but you can also use white if you want less wine taste.  Sometimes I use sherry too.  Alcohol really brings out the flavors in tomatoes (but don't worry, all the booze will be gone after you cook it!).  And, finally, I always get better results with canned tomatoes rather than fresh, plus it's way easier and cheaper.  I like to use the kind that's like whole peeled tomatoes in a thick sauce - squish the whole tomatoes with your hands before you add them, and cook with the lid off to evaporate some liquid.&#060;/p&#062;
&#060;p&#062;Oh, and I also like the one Ceit posted - it's very simple but somehow the butter really adds that extra something.

				<description>&#060;p&#062;Ok this sauce is pretty mild, but you can jazz it up with garlic, basil, crushed red pepper, etc. Adding a bit of lemon juice or balsamic vinegar will change it too.&#060;/p&#062;
