I've tried on a whole bunch, and what I've found is that the v-neck type is far easier for me to wear. I almost always wear them buttoned at least part way, otherwise they feel too loosey-goosey, so having the v-neck to break up the visual bulk is good. But crewnecks all the way for actual warmth. And I love the pockets on the lavender one. I've been wishing for one with patch pockets like that. I'm curious as to why you're not reaching for the tweedy-grey one purchased pre-Covid.
