While you can find a zillion recipes that add creme fraiche and other things, the real deal is just 3 ingredients: smoked fish (usually haddock or whiting), mayonnaise, lemon juice.&#038;nbsp; Where did I learn this - from the folks at &#060;a rel=&#034;nofollow&#034; href=&#034;https://acmesmokedfish.com/&#034;&#062;Acme&#060;/a&#062;.&#060;/p&#062;
&#060;p&#062;S - those same brilliant Acme folks smoke sable too and you're so right - it is NOT cheap (9.99 for 3 onces).&#060;/p&#062;
&#060;p&#062;There is a story I have told here before, about a time in 1989 when my first husband and I - newlyweds and poor as church mice - invited married friends to our apartment for a classic Jewish brunch: bagels, lox, whitefish salad, sour tomatoes, etc.&#038;nbsp; We had a small piece of sable that we spent a fortune on so we could entertain them in style.&#038;nbsp; But no, they gave their one-year-old daughter THE ENTIRE THING, commenting on how much she loved smoked sable.&#038;nbsp; The first Mr. A did not have a poker face and I never saw him look so dismayed.

&#060;p&#062;No point in buying less - the resident gentlemen can eat their way through a pound of smoked whitefish salad in a couple of days.&#038;nbsp;&#038;nbsp;&#060;/p&#062;
&#060;p&#062;Last time I ordered 2 pounds of boneless kippers as well and shared a pound of those and a pound of Finnan Haddie with my friend Alistair, who grew up in a fishing village in Scotland.&#038;nbsp;&#038;nbsp;&#060;/p&#062;
&#060;p&#062;I forgive him for the fact that both gifts are still in the freezer.&#038;nbsp; Their son will be home for Christmas and they will thaw and cook both.&#038;nbsp; Or so they say.&#038;nbsp; ;)&#060;/p&#062;
