L.L. Bean - the 1912 line. Or if you want the good old 100% cotton honest denim, that would be their Double L Jeans line. The fit in that one is right out of the late 80's or so but OMG, the fabric! It is awesome.

Levis has a lot of 100% and 99% cotton denim and a huge number of different cuts and washes. They have some pretty contemporary looking denim in their "Line 8" and "Made & Crafted" collections, and the current 500 series (501, 501CT, 505C) is quite nice if you can figure out your size.

The LL Bean 1912 denim is pretty nice, as is Eddie Bauer's denim -- which is quite similar. The styles are not cutting edge but not terrible either, if their sizing "gets" you. Check Uniqlo, too -- look specifically for the "Kaihara" denim in 99% or 100% cotton: great Japanese selvage denim at a ridiculously good pricepoint.

Or cruise around thrift stores for an eternity, which is what I generally do for pants.

If you try AG Stilts, size down, they are super stretchy. I have had good luck with some Lucky Brand and some Joes Jeans.

Have you been back to the Gap? Try BR too. Then try brands like KUT from the KLOTH, and AG.

I am not comfortable with ultra stretchy either. I have one pair of LL Bean 1912 jeans--nice material, but not the most fashion forward. I also noticed that Levi's website gives the fabric composition right at the top of the description--that allows you to make some reasonable deductions about stretch.

Where can you buy medium weight, not super stretchy jeans these days? I've just been jeans shopping, and pretty much every pair of jeans I saw were essentially jeggings, even if not labeled as such. Even premium brands had incredibly thin, stretchy fabric, and when I tried them on they looked cheaper than the 3 year old Gap skinnies I was wearing.

Update: LOFT curvy skinnies fit the bill (plus, no gap at the waist). The rise is a little higher than I'd like, but I can live with that.
