I'd caution that this only works if the old hem and the new hem are the same width. Do not try with bootcuts! As others have mentioned, curling/flipping is an issue too especially if the hems are not exactly the same size. You might have to press your hems every time you wear them.

I hem my own jeans these days (honestly the tailor is $$$$ and didn't do a great job anyway). I don't have a sewing machine so I do it by hand. I just fold the excess length up and sew a straight backstitch across the bottom. It looks fine. I generally prefer to keep the extra fabric (without cutting it off) so that I can let it out if the jeans shrink or something.
I had a pair of jeans hemmed this way and they did curl up. I do a regular hem on a sewing machine.

I still need to take mine to a tailor. I don't trust myself with this with a pair of jeans that fits and flatters. It took me forever to find jeans!

Don't do it to a pair of jeans you love. The bottoms will most likely curl up around the new stitching after washing. Maybe not awful with skinny or straight legs, but will be very noticeable on bootcuts or wider leg styles.

You are better off buying jean hemming thread at a sewing/fabric shop made specifically for jeans (matching the original color thread used on the jeans) and cutting off the excess length and doing a proper traditional hem.

Yes, I always do it like so for my family! I love this way of shortening jeans as if you do it well then you still have the original hem (which is indispensable for an impecable look of a pair of jeans, in my book).
