I've never tried rhubarb that I can recall, but loooove strawberries! These are ones I picked from a local farm a few days ago. I just eat them plain, with ice cream, or put them in acai bowls or smoothies. I did have a strawberry mint cold soup at a restaurant once that was delicious

I'm not a baker at all and don't like most sweet baked goods. I do like croissants, but leave those to the pros!

There are some tasty ideas here.

I sometimes bake rhubarb with sugar and orange zest and juice and have it with greek yoghurt.

I tend to not cook strawberries but agree it could be a lovely combo.

My breakfast most mornings is some plain Greek yogurt topped with whatever fruit is in season and sprinkled with a bit of homemade granola. Add a drizzle of honey if you want it it sweeter and some fresh mint if it’s handy. It’s super easy with strawberries (though the pic shows blueberry and pomegranate), for rhubarb you probably want to cook/sweeten first.

Thanks Stag, for putting this combination in my head. I do love it (particularly in pie form, though I haven't had it in years). I'm not much of a fruit eater, but one of my indulgences is a weekly bunch of rhubarb for myself, which I cook and then add diet strawberry jelly to. But I also have frozen strawberries in the freezer (winter here, so not in season), so today I added some actual strawberries to the cooking.

As for ideas, I've noticed heaps of baked oats with fruit recipes around at the moment. Here's one that's relatively low fat

https://www.woolworths.com.au/.....rawberries that I might try next week.

Also I second Rachylou - you can definitely cut down the butter and almond meal. It might not be quite as delicious, but will still be quite nice. I've made apple crumble (which is similar) with maybe just one generous table spoon of butter for a dish that makes enough for our family of five. There's one one page 16 of this book https://www.totalwellbeingdiet.....2019-1.pdf

It's apple and berry but you could just substitute the strawberries for the apple.

I'd suggest homemade strawberry & rhubarb jam! Spread on gluten free bread rolls.

I think you can cut the almond flour and reduce the butter and still get a tasty crumble…

Last year, I made a rhubarb spritzer. I can't remember which exact recipe, but essentially cook rhubarb with a bit of sugar, water, and lemon juice until it starts to fall apart. Strain (the solids are good on top of oatmeal or yogurt), and add seltzer or other mixers of your choice.

I don't care for rhubarb, but I like fresh strawberries a lot. I eat them plain, in green salads, fruit salads, with whipped cream as a desert or sprinkled over other deserts or pancakes/waffles. I don't do much baking these days.

Strawberry rhubarb sauce is delicious for pound cake or ice cream, which I realize doesn’t help with reducing fat! I imagine this sauce would be nice on a pavlova though.

I have a recipe for rhubarb raspberry and pear pie that’s delicious!

https://www.epicurious.com/rec.....-pies-1730

But if you’re watching calories and avoiding gluten, I might try this one and decrease the butter in the topping and substitute gluten free flour:
https://www.dceatings.com/reci.....ar-crumble

Local strawberries will be available here for a few months. Rhubarb, otoh, probably only has another month in its season. I love them both and I love them together. I haven’t made a strawberry-rhubarb pie or my great-grandma’s rhubarb coffee cake this year, because gluten has been bothering me. I’ve been using the topping from this crisp on 3 cups of fruit, mixed with a little cornstarch and sugar. https://sallysbakingaddiction......int/74825/ I just calculated it out and see that it has way more calories than I realized, half of them fat calories, which are my bugaboo (yes, I know that many people avoid carbs. For me, it’s fat that’s a problem).

I’m looking for suggestions of lower calorie (without getting into all the substitutes out there, like fake butter) ways to enjoy the yummy goodness. What’s your favorite way to enjoy them?
