I remember S., from Academichic first starting out with the no shampoo routine and she just used regular drugstore conditioner and after a few weeks, she said her hair started to smell terrible. So then she started to buy the more expensive but correct conditioner. I think the right cut would help improve the shape of it while curly. And, as you mentioned, you can always pull out your blow dryer and straighten it if you feel like it! Your hair seems to be similar in texture to mine. As a child I had barely wavy, very long dark blond hair. In my late 20s it went very dark, I started to get (even more) silver hairs, and become much easier to curl. I used too much product in the front and not enough in the back though, so the front is a bit too crunchy and the back is kind of frizzy (you can't see it there obviously).
