Not yak (Racheylou)- but something different all the same!  It is very mild and creamy, but not a soft cheese.  Nom nom!  Working my way through the recommendations is fun!

				<description>&#060;p&#062;I enjoy cheese but don’t buy a lot of specialty cheeses. While on a weekend away I added cheese to a wine tasting and I found a new one, Lambchopper Cypress Grove. I had thought the portions were skimpy but when I went to buy it I found out why. $28.99 a pound,  I think I just haven’t gotten my head around paying that much. Definitely not saying the cheese maker shouldn’t be well compensated but just like wine or items of clothing I have my normal range, and breaking out if it is a shock Recently I found a small piece in our local grocery store in their odds and ends basket. I savored it.&#060;/p&#062;
&#060;p&#062;I am a melted cheese lover. Fondue, melted Brie in pastry with nuts and dried fruit, grilled cheese, even nachos.&#060;/p&#062;
&#060;p&#062;Light and fluffy cheesecake was a revelation. The one place I knew it went out of business.

I love old, sharp cheddars (the Irish ones are the best imo!), smoked goudas, crumbly ages Parmasans (which DH and I go through at a shocking rate), creamy Bries with interesting toppers on it, any of those Boursin ones (not sophisticated I know, but come on, they are delicious). I even love Cheese Whiz lol!! #keepingitreal&#060;/p&#062;

				<description>&#060;p&#062;If you enjoy cheddars, I highly recommend ordering a tin (yes, a tin) of Cougar Gold. It’s made on campus at Washington State University and only available during the winter months. We get one almost every year and have been known to get a second to store in the back of the refrigerator to age for an extra year before opening. It’s sharp and crumbly and when aged, develops crystals that add to the texture.

It appears that cheese is a fraught subject!   <span aria-hidden="true" class="emoticon emoticon-wink icon-emoticon-wink "></span>     In retrospect, I can see how it is a difficult food.  I do know some folks with gastric issues (myself included) where cheese is okay and even a delight!  I'm having problems with animal protei (meat), but fish, eggs and cheese are okay.  Luckily, I've never had any problems with dairy.  Thus, I'm enjoying going beyond the standard grocery store choices.  I'm interested in recommendations and willing to hunt them out.  &#060;/p&#062;
&#060;p&#062;Jane - Compte sounds right up my alley!&#060;/p&#062;
&#060;p&#062;RL - never heard of yak cheese, but it sounds interesting (mild, high in 'good' fats) so will see if I can source some)&#060;/p&#062;
&#060;p&#062;Lisap - I know there are some cheese substitutes made from nuts, and cashews is often used to make these products.  DS#1 doesn't have nut allergies, but he doesn't digest cashews well!  He is super thin, and I used to buy cashews in bulk for him to try and fatten him up - but he used to get very sick.  It took a while to figure out his intolerance.  DS#2 has some lactose intolerance and has goats milk and goats milk ice cream!  He doesn't have problems with cheese, though.&#060;/p&#062;
&#060;p&#062;Regarding cheesecake - do you like it dense, or light and fluffy?

But I’m much more an “anything goes, / check your macros” kinda person—and I track them by the week. A cheese plate one night, a bunch of fruit or bowl of popcorn the next, all no problem as long as you get your protein and it averages out ok. I’m lucky in not needing to worry about calcium as much as most women, because I’ve drunk 1-2 gallons of milk most weeks of my life, but for those who have never contemplated bringing Bossie home, cheese is a decent source of calcium, and has some protein. And back to the point of the post, it’s DELICIOUS.

I do eat it when it's in the fridge , which is probably why I am so heavy right now . He can scarcely eat in the morning, &#038;amp; expects to be fed every evening. Traveling, we have eaten the way you describe, except I often try to find a picturesque spot for a picnic.

				<description>&#060;p&#062;Haven't posted a food pic post in 4 months since it has been a bit same-old/same-old with the exception of fresh produce like asparagus, strawberries, and raspberries - but I digress.&#060;/p&#062;
&#060;p&#062;I don't think that there is a cheese that I don't LOVE!  When DH and I travel we frequently visit an artisan food shop, pick up some cheeses, baguette or crackers, grapes, and a bottle of wine - and dine in!  We do that at home as well and have discovered a cool cheese shop that has all kinds of interesting products.  They actually brought in a cheese we requested (after a 2 year search) and reported afterwards that it sold out in a week!  We visited today and left with two new-to-us cheeses and a specialty 'fennel salami' for a charcuterie style dinner later this week.&#060;/p&#062;

&#060;p&#062;#1 DH and I had P'tit Basque while visiting my Dad in Seattle two years ago, and managed to score a small wheel earlier this summer.&#060;br /&#062;
#2 Picobello.  A new to me Dutch cheese that I am mad about.  Gouda'esque.  Smokey with a hint of butterscotch.  Yummy!
