				<description>&#060;p&#062;Echo!  DS#1 (the foodie) says your version - with the peppers, is Spanish in origin.  Italian's use onion, celery, and garlic.  This is all pretty general, however.  He makes a soup that subs out the celery and uses fennel!  &#060;/p&#062;
&#060;p&#062;My SIL put her veg through the food processor, and her veggie averse children were none the wiser! :-)&#060;/p&#062;
&#060;p&#062;Emily, your cauliflower looks yummy!  I put raw cauliflower through the food processor until it looks like rice.  Microwave it for 8 min.  and serve it under curry.  I'll also make mashed potatoes with 1/4 part cauliflower.  Makes for a fluffier mash.

Carla, I commonly use the &#034;trinity&#034; of onion, celery and peppers, though I add carrots for things like shepherd's pie, too. Actually, I have recently started to put veggies in the blender or bullet so they're completely invisible in things like soup. The kids love the flavor, and never have any idea that they're eating more healthfully!

				<description>&#060;p&#062;Maybe not the most appetizing photos ever seen, but super yummy (always--these are dinner staples, for me) oven roasted cauliflower and dal made with pink lentils.  I'd planned to add the cauliflower into the dal, but I ate half the pan already.  Ooops!

				<description>&#060;p&#062;True confession - both the Whole Foods and Trader Joes near me sell mirepoix pre-chopped, as well as separate containers of chopped onion, celery and carrot. &#038;nbsp;I will never chop my own again, absent having some odds and ends in the 'fridge that need to be used.&#060;br /&#062;And &#060;b&#062;Eliza&#060;/b&#062; is right - you have a very neat chop!

				<description>&#060;p&#062;I am a 'scratch' cook, and for many items ranging from soups to meat pies, I start with a base of finely chopped vegetables - onions, celery, and carrots.  My foodie eldest son introduced me to the term 'mirepoix' for this mix of 'sweated' vegetables.  Apparently every culture has a variation.  He says my onion, celery, carrot version is French.  Mine went into a shepherds pie.  &#060;/p&#062;
&#060;p&#062;The new crock pot is seeing a lot action - this past week I made a pork shoulder that worked out wonderfully.  &#060;/p&#062;
&#060;p&#062;Did you make anything interesting recently?  Please post pics.
