Jane - so good to learn your DS is interested in cookery! DS#1 is a very good cook while DS#2 and DH not so much ;-). Anything Jamie Oliver, and he owns a couple of the books. We used to watch a home style channel with WNTW, home building and decor, and cooking. Jamie Oliver and Curtis from 'The Take Home Chef' were the cooking shows that inspired him the most.

Joy - I just had my mother stay with me for a week and she is diabetic. She does not manage her food well (portion size and a sweet tooth are problems). Before she came I went to the library and borrowed a couple of books about cooking for the condition. I was pleased that over the week I cooked for her, her numbers dropped from 8-9 to 7's. Breakfast was a poached egg on multigrain bread or old fashioned large flake oatmeal and plain fresh fruit. Lunch was usually a salad including non lettuce salads like Greek or tomatoe, and cold chicken (I cooked a whole chicken and made up a box of the meat). Once we had salmon. I also made a lentil soup. Dinners were cooked for the whole family, and because it was hot we did a lot of b-b-que. I made a ratatouille and gave mom an extra serving of veg to take place of the carb. We did Aspergus, since it has just come into season. One night I made a curry, and served it on cauliflower rice. We are desert eaters, but I cook a lot with fruit. I did serve up desert for mom, but kept portions small.

Hi Joy, I find the weight watchers recipes very good, there are set out in a series of books. Whilst it doesn't make direct reference to salt, fat and carbs, the essence of the point system is that those foods with any / higher salt, fat, carbs, have higher points.

I have the chicken and the baking books. They were reasonably priced, and set out the weight watchers points.

I am hoping this is the link to the US version of the chicken book that I have.

So good to have more time to spend on cooking! These look absolutely delicious. I love making and eating a home made quiche.

DS and DH do a lot of cooking. Do you know James Haskell? He has a book on fitness and cookery and DS (16) is enjoying cooking from it. This is a recent chilli that DS cooked. It was delicious! And here are some cookies that DS also cooked.

Well, I've been enjoying cooking more now that I've got more time, but I haven't taken many photos. I did borrow some cookery books from the library to see of I could resolve some problems or learn some new tricks (bread and pie) which resulted in a run of bread baking and pie making. DS#2 said the last 2 quiches were the best he had ever had (as he packed half a pie for his lunch at work!) I had cooked the onions and a tiny bit of garlic until carmelised and mixed it in with the egg and milk. Also, the turkey pie got good review. I improved the gravy with a splash of cream!

#1 quiche
#2-3 turkey pie
#4 potatoe hash with eggs sunny side (in progress) - seasoned with cumin, paprika, salt and pepper. There is a little square of cheese under each egg, and onions in with the potatoes.
#5 marinated pork shish kebab with pineapple, peppers, onion and courgette (zucchini)

So what have you been cooking or eating? Now is the time to post your pics and share your recipes.
